As the Monsoon is round the corner & the Bengal's fish markets are gonna be flooded with Hilsa within a month , let's peep into the most popular & delicate Hilsa dish that most of the Bengalis die for. If you ask any Bengali to name their favorite fish, chances are that they will say it is the Hilsa...& for them, "Eelish Paturi" along side a full dish of steamed hot rice is just heaven ❤❤ .

Eelish or Hilsa is Known as the ‘King of Fish’ . Hilsa is an integral part of Bengali cuisine and culture. It is considered a delicacy and enjoyed in various forms and preparations, but one that stands out as the most authentic and traditional is Hilsa Patur Or Eelish Paturi. 🩷🩷

In most of the highway dhaba where there is a live kitchen in front, we often see a cooking staff throwing some whole spices in hot oil on a frypan just before adding dal fry to it & the smoke oozes out immediately with a beautiful aroma. That's what 'tarka' is which can give our cooking a winning edge if properly done. While the Bengali cuisine is known for its diverse flavors and distinctive preparation methods, one important aspect of Bengali cooking is 'Foron' Or 'Tarka' & it's timing which refers to the tempering of spices in hot oil or ghee. We use many spices for tarka like dry chilli, Jeera, mustard seeds, bay leaves, cardamom, clove, cinnamon, curry leaves etc., depending on the dish we are cooking. But the timing of the tarka can significantly impact the flavor and aroma of a dish, making it essential to get it right.

Timing of Tarka in Bengali Style Cooking:

Traditionally, the timing of the tarka is very crucial in Bengali cooking. Generally, Bengali recipes require the tempering of spices at the beginning or the end of the cooking process. The timing of the tarka will depend on the dish you are cooking, but there are some general guidelines that are followed to get it right.

When to add the tarka at the beginning:

In some Bengali dishes such as dal, the tarka is added at the beginning of the cooking process. This helps to extract the flavors from the spices and infuse them into the dish as it cooks.
