Baked Huli Huli Chicken
Servings: 4
Ingredients:
3 pounds chicken thighs, bone-in, skin-on 🍗
1 cup pineapple juice 🍍
1/2 cup soy sauce 🥢
1/2 cup brown sugar, packed 🧁
1/3 cup ketchup 🍅
1/4 cup chicken broth 🍲
2 tablespoons fresh ginger, grated 🧄
2 garlic cloves, minced 🧄
2 teaspoons sesame oil 🌱
1 tablespoon cornstarch 🌽
1 tablespoon water 💧
Fresh pineapple slices, for garnish (optional) 🍍
Green onions, sliced for garnish (optional) 🧅
Sesame seeds, for garnish (optional) 🌱
Directions:
Preheat your oven to 375°F (190°C) and arrange the chicken thighs in a single layer in a large baking dish.
In a saucepan, combine the pineapple juice, soy sauce, brown sugar, ketchup, chicken broth, grated ginger, minced garlic, and sesame oil over medium heat. Bring the mixture to a low boil.
Simmer the sauce for 10 minutes, occasionally stirring, until slightly thickened.
In a small bowl, whisk together the cornstarch and water. Pour this slurry into the simmering sauce, whisking constantly until the sauce has thickened enough to coat the back of a spoon.
Pour the sauce over the chicken thighs, ensuring they are well coated.
Bake in the preheated oven for 45 minutes to an hour, until the chicken registers an internal temperature of 165°F (74°C) and the sauce is bubbling and caramelized. Baste the chicken with sauce halfway through cooking for extra flavor.

Pineapple Chicken and Rice

Ingredients:

2 boneless, skinless chicken breasts
1 cup diced pineapple
1 cup rice
2 cups water
1 tablespoon soy sauce
1 tablespoon honey
1 teaspoon garlic, minced
1 teaspoon ginger, minced
1 tablespoon olive oil
Salt and pepper to taste
Fresh cilantro for garnish
Directions:

Rinse rice under cold water until the water runs clear. Combine rice and water in a saucepan over medium heat. Bring to a boil, then reduce heat to low, cover, and simmer for 18 minutes, or until water is absorbed. Remove from heat and let sit, covered, for 5 minutes.
While rice is cooking, heat olive oil in a skillet over medium heat. Season chicken breasts with salt and pepper, and cook until golden brown and cooked through, about 6-7 minutes per side. Remove and set aside.
In the same skillet, add diced pineapple, soy sauce, honey, garlic, and ginger. Cook over medium heat until the sauce thickens, about 5 minutes.
Slice the cooked chicken and return it to the skillet with the pineapple sauce, tossing to coat.

🌟 INGREDIENTS
4¼ cups all-purpose flour
1 cup white sugar
2 tsp. baking powder
1 tsp. baking soda
⅔ cup evaporated milk
2 tbsp. oil
1 tsp. vanilla essence or vanilla extract
Cooking oil for deep frying
1 cup sesame seeds
🌟 PROCEDURE
In a bowl, combine the flour, baking powder, baking soda, and sugar. Stir well.
In a separate bowl, whisk together the oil, milk, and vanilla extract.
Gradually mix the dry ingredients with the wet ingredients until well combined.
Thoroughly mix until you achieve a homogenous dough.
Use two tablespoons to scoop the dough, forming it into a round ball. Roll this ball in sesame seeds until fully coated.

Ingredients:
1 pound sausage
1 1/2 ounces pork gravy mix (1 package of Pioneer Brand Peppered Sausage Gravy Mix)
1 cup cheddar cheese, shredded
6 eggs
1/2 cup milk
Salt, to taste
Black pepper, to taste
1 can (8 oz) biscuits (1 can Pillsbury Grands Biscuits)
Directions:
Preheat oven to 350 degrees Fahrenheit.
Grease a 9×13-inch baking pan with non-stick spray.
Cut the biscuits into 1-inch pieces and line the bottom of the pan with them.
Brown the sausage in a skillet and then scatter it over the biscuits.
Sprinkle the shredded cheddar cheese over the sausage.

2 egg yolks
4 egg whites
1/4 cup sugar
3/4 cup pancake mix
1/4 cup milk

Homemade Marinara Sauce 🍅

Ingredients:
2 tablespoons Extra virgin olive oil
1 cup (145 g) finely chopped yellow onion
2 tablespoons minced garlic (approximately 5 large cloves)
28 oz (680 g) crushed tomatoes (no spices or salt added)
2 tablespoons finely shredded fresh basil
2 teaspoons sugar
¾ teaspoons dried oregano
¾ teaspoons finely ground sea salt
½ teaspoon finely cracked black pepper
¼ teaspoon red pepper flakes

Instructions:
Heat Olive Oil: Heat olive oil in a large saucepan over medium/high heat until shimmering.

Saute Onion: Add onion and cook, stirring frequently, until softened and translucent (about 3 minutes).

Add Garlic: Add garlic, cook (stirring frequently) until fragrant (about 30 seconds).

🍯🥢 Honey Soy Chicken Recipe 🍗🥡

Ingredients:

🍗 1.25 - 1.5 kg / 2.5 - 3 lb skinless boneless chicken thighs or breast
🌱 1 tbsp vegetable oil, for cooking

Honey Soy Marinade Sauce:
🥢 1/2 cup soy sauce
🍯 2/3 cup honey (substitute maple syrup)
🍏 1/3 cup cider vinegar (or rice vinegar)
🍗 1/4 cup chicken broth
🍶 1 tbsp toasted sesame oil
🧄 1 1/2 tbsp garlic, finely minced

Serving Sauce:
💧 1/3 cup water
🌽 1 1/2 tsp cornflour/cornstarch

Garnishes (Optional):
🥬 Green onion, finely sliced
🌰 Sesame seeds

Instructions:

1. Marinade Sauce:

Place ingredients in a jug and mix well until honey is completely dissolved.
Reserve 1/4 cup for basting, refrigerate.
Reserve 2/3 cup for serving sauce, refrigerate.
2. Marinade Chicken:

Pour remaining marinade over chicken in a container. Coat chicken thoroughly.
Cover and refrigerate for 3 to 48 hours (minimum 3 hrs).
3. Serving Sauce (Makes 1 cup):

Place reserved sauce in a small saucepan.
Mix cornflour and water, then add into saucepan.
Simmer over medium heat for 5 minutes, stirring regularly, until it thickens to a syrupy consistency. Set aside and keep warm. If it gets too thick, just add a bit more water.
4. Cook:

Brush BBQ plate or grills with oil and heat to medium-high. Or heat oil in a large skillet over medium-high heat.
For thighs: Cook the first side for 2 minutes, then flip and dab with reserved basting sauce. Cook for 2 minutes, flip and baste. Then flip/baste every 1 minute for a total cook time of ~10 minutes or until a thermometer reads 75°C/165°F.
For breast: Cook the first side for 2 minutes, flip, and baste. Cook for 2 minutes, then flip and baste every 45 seconds or so for a total cook time of ~8 minutes (internal temp 66°C / 151°F).
5. Rest:

Transfer to a serving plate, cover loosely with foil, and rest for 5 minutes.
6. Serve:

Serve chicken garnished with sesame seeds and green onion, with sauce on the side so people can help themselves. Enjoy your delicious Honey Soy Chicken! 🍽️🍗
