Navratri Special recipe

Rajgira (Amaranth Flour) and mango Dhokla

Amaranth is a moderate–rich source of dietary minerals, including phosphorus, manganese, and iron

It is also full o f antioxidants, vitamin C and E.

1 Rajgira atta 250Gms
2 Mango purée 150Gms
3 Curd 50Gms
4 Rock salt 20Gms
5 Eno 1/2tsp
6 Oil 50ml

"Directions: 1. Soak all ingredients except eno for 8 hours.
2. Just before steaming add eno.
3. Pour in a greased tray and steam it in the steamer for 20 minutes.
4. Temper with sesame seeds, chillies and curry leaves.

Few points to be considered while using Saboodana..

1) Before making the dishes, the sabudana pearls need to be soaked in water for a few hours until they are separate and moist.

2) After boiling for about 10-12 minutes, the outside of the sago is cooked, but the centres are still opaque. If you boil further, the outer layers will begin to disintegrate into starch. You should turn off the flame and let stand for 30 minutes to allow the centre of the sago pearls to cook through.

3) For savoury dishes, soaking sabudana with curd prevents it from becoming sticky

4) For large sago pearls, the cooking process is exactly the same, except that you have to do its twice otherwise the inner part of the sago pearl will not be cooked.Don't cook the sago over too high a heat or it will turn gummy in the pan.

5) You need to use sufficient water (1:30 ratio) for boiling, otherwise the water will become too starchy and the heat will not be able to pe*****te well to completely cook the sago.

6) Pour the sago slowly into the boiling water, otherwise the boiling water will suddenly bubble up and overflow the pot

7) Deep-fry at 170°C
