It gives us immense pleasure to introduce ourselves and our hospitality to you. It all began with a small household but a unique step towards a startup initiative. Kanjibhai Patel in 1952, stepped in, in Aamchi Mumbai with a “Pani Puri Ki Dukaan” i.e as a Pani Puri seller with a dream and passion to provide Food, rich in taste and quality. Soon, this Pani Puri became one of the favorite “Massala C

haat” and people started to acknowledge the existence of this Pani Puri ki Dukaan as “Kanjibhai PaniPuri Waala”. And then, this recognition resulted into a Quality Food Catering setup in 1964. With his hard work and huge efforts of 37 years Shri. Kanjibhai made a name for himself in the growing market. In 1989, he renamed his business as “Nilesh Caterers” and SINCE 62 years past from now, the team is still continuing to put efforts for providing Food with Quality and richness and will continue the same in future too…!!! Origin, Benefits and Nutrition Value of Indian Spices

1) Fennel Seed

Origin

Fennel is native to southern Europe and the Mediterranean area. The name comes from the Greek word for "marathon" because the famous battle at Marathon (490 BC) against the Persians was fought on a field of Fennel. Pliny said that snakes casting off their skins ate Fennel to restore their eyesight.

The cultivated plant is about 1 m tall and has stalks with finely divided leaves composed of many linear or awl-shaped segments. The grayish, compound umbels bear small yellow flowers. It is in leaf all year, in flower from August to October, and the seeds ripen from September to October. The scented flowers are hermaphrodite (have both male and female organs) and are pollinated by insects.

Benefits (Use)

Fennel seeds are popular in both sweet and savory dishes. Fennel seeds are a component of Chinese five-spice. The spice is said to cure everything from hiccups and coughs to earaches, toothaches, and asthma. Fragrant fennel oil is used both to flavor sweets and perfume soaps.

Nutrition Value

A 100-gram portion of fennel seeds provides 1,440 kilojoules (345 kilocalories) of food energy, and it is a rich source (more than 19% of the Daily Value, DV) of protein, dietary fiber, B vitamins and several dietary minerals, especially calcium, iron, magnesium and manganese, all of which exceed 100% DV (table). Fennel seeds are 52% carbohydrates, 15% fat, 40% dietary fiber, 16% protein and 9% water.

7) Jalebi

We even have an item number associated with this delicious sweet! How can it not be Indian? But it isn't. Jalebi is actually from the Middle East though different variations of the sweet were found across different Asian regions. Originally called zalabiya (Arabic)or the zalibiya (Persian), the dish was brought to India by Persian invaders. Today, the dessert Jalebi is famous all over the country in different forms. While North India loves their thin and crispy jalebis, the South Indian version consists of thicker and have a slightly different shape. Jaangiri and Imartee are variations of the Jalebi. Wow! So many variations of just one sweet. No wonder you thought it was Indian!

6) Naan

This is one dish that is loved all over the world. A type of leavened bread, Naan is a staple of North India and is available in almost all North Indian restaurants across the country. The Americans and Europeans have recently discovered the joys of this bread. However, naan is not Indian but was brought to India during the Mughal era. Naan has it's roots in Persian cuisine though the form of leavened bread is actually Iranian. The soft, melt-in-the-mouth bread is surely a favourite but trying different forms with rose-water, khus or stuffed naan might actually tingle your taste buds!

5) Rajma Chawal (Kidney Beans)

Rajma chawal has quickly spread from being a North Indian staple to being loved by most Indians. The dish which is as popular as the North Indian chole-bhature is a wholesome meal in itself. However, the preparation of Rajma or the kidney bean in Rajma chawal is not Indian. The bean was brought to India through Central Mexico and Guatemala. The initial preparation or soaking and boiling the beans and adding a few spices is adapted from Mexican recipes. Rajma is a staple in Mexican diet even today though it's Indian variants are quite different from the Mexican preparations. The bean and recipes prepared using Rajma are famous in North India and the locals often add Indian spices and vegetables like onions and tomatoes to make it tangy. Cool, isn't it?

4) Dal Bhaat (Dal-Rice)

Dal Bhaat or Dal-rice is a comfort food all over India. There are even variations of this food like the Khichdi which are very popular among Indians. Though dal bhaat seems like a very simple, Indian dish, it is not Indian at all. Dal bhaat is actually of Nepali origin and it was through North Indian influences that the dish entered India and spread throughout the region. We're sure you're going to dream of the Himalayas the next time you're eating this simple food!
