Kefir is basically fermented milk which looks and tastes similar to buttermilk or chaas or thinner yogurt. It has very healthy probiotic bacteria and it's amazing for gut health. İ had asked my friends on Facebook to challenge me to make/bake something interesting. Cronuts were the most challenging in that list considering İ had never ever seen what the look like forget about tasting it. Also laminated doughs are tough to work with. But after days of searching for tips and a recipe that seemed ok to my judgement İ started the process yesterday. And i think it's a success! They rose extremely well and look amazing. What do you guys think? @ Edirne

This is roughly the recipe which is roughly from Food Wishes
Ingredients for 10 Cronuts plus bits and bobs:
1 package dry active yeast (2 1/4 tsp) or 20 gms fresh yeast
1/2 cup warm water (105 degrees F.)
1 teaspoon fine salt
2 rounded tablespoons white sugar (add an extra if you want a sweeter 'nut)
1/2 cup milk
2 tablespoons melted butter
1 teaspoon of vanilla extract
1 large egg
1/8 teaspoon ground nutmeg
1 pound all-purpose flour, more as needed
Additionally
6 ounces soft, unsalted, "European-style" butter (12 tablespoons) for the lamination
Fist steps:
Night before
- Combine yeast and warm water, and let sit five minutes.
- Add the rest of the ingredients, except for the flour and the European-style butter, and whisk to combine.
- Add the flour, and knead for about three minutes or until a soft sticky dough ball forms.
- Wrap dough in plastic wrap very well, and refrigerate overnight.
Next morning
- Roll dough out into roughly a 18 x 9-inch rectangle.
- The butter for lamination should be super soft and spreadable.
- Visualize the dough in three parts of 6 inches each. Apply half the butter in the middle 6 inch section (check my rough diagram) then fold one of the sections over to cover the butter. Apply remaining butter on top of that folded section and finally fold the remaining section on top.
- Cover well with cling film and into the fridge for about 20-30 minutes.
- Now start your first 'turn' basically roll the dough with the folded side on your right till it's about 18 in in length again. Fold the top third down to the middle and the bottom third on too. Cover with cling film and into refrigerator for 20-30 minutes. Repeat this two more times.
- After your last turn, remove dough and roll into 1/2 inch thickness. Cut with a 3 inch round cutter and cut centre out with a small round cutter or a doughnut cutter if you have it. Don't waste the remaining dough!! Cut them into smaller circles or simply into bits and bobs!
- Lay everything carefully on lined baking trays and proof for 1- 2 hours till tripled in height.
- Heat oil till 350 C and fry for 1 minute on each side. Let them drain on paper towels for a few seconds and roll in cinnamon sugar.
- Cool completely before filling with pastry cream.
- Eat immediately!
Pastry cream
2 1/4 cup milk
1/4 cup sugar
1/4 cup cornstarch
4 egg yolks
Mix everything together in a thick bottom pan and whisk on a low/medium heat for 4-5 minutes till it thickens and gets glossy. Pour into a shallow dish and cover with a cling film with the film touching the surface of the pastry cream. Keep outside to cool down and into the fridge for 4 hours to chill completely. Once the cronuts have cooled down and the pastry cream is chilled. Fill a pastry bag with a tip that is specifically designed for filling pastries (I'm attaching a photo). Fill the cronuts on four different places so that the cream is well disbursed.

I made this video for a friend who is alone here and struggling with options that are easy to make yet taste good. I am no expert at this dish having made it just twice, but it is incredibly easy and tastes yummm.

Easiest cake recipe ever. Perfect for beginners and those who are scared of baking!

Even if I'm not fasting I can still make and enjoy ramazan pide and share with a sweet neighbor too!! @ Edirne
Recipe was simple:
250 gms flour
1/2 tsp salt
1 tsp sugar
5 gms instant yeast
1 egg
25 gms butter
100 ml milk
75 ml water
Make a dough which is soft but not sticky. Keep covered in a warm place for 1 hour till well risen. Roll on a parchment paper. Score with your fingers in the traditional pide form. Brush with egg wash and sprinkle with nigella seeds and sesame seeds. Keep covered for half hour. Egg wash once more and into a pre heated oven at 200 C for 15 mins.
