Dish Showcase 002: Chaat Gift Platter
There is something about the shift from winter to spring that calls for an evening with Chai, good company, and food that feels like a celebration.
A client came to us wanting to do something special for her Mom's birthday. Not a formal sit down, not a cake and candles situation. Just a beautiful spread of the things her mom loves, presented in a way that felt like a gift in itself.
So we put together a Chaat Gift Platter. Gol Gappe, Papdi Chaat, Vada Pav, Paneer Tikka, and a spread of snacks built for an evening exactly like this. The kind of food you eat slowly, with chai in hand, while the weather outside is finally starting to turn.

Dish Showcase 001: Papdi Chaat Millefeuille
Millefeuille, translated literally, means a thousand layers. A French pastry technique built on precision, patience, and the kind of delicate layering that turns something simple into something extraordinary.
We took that technique and filled it with the soul of Papdi Chaat. Tangy tamarind, cool whisked yoghurt, green coriander chutney, a hit of chaat masala, and that unmistakable crunch. Every layer carrying a flavour, every bite giving you the full experience.
The result is something that feels familiar and completely new at the same time. Elevated enough for a grazing table centrepiece, fun enough for a spring party that wants chaat with a serious twist.

Holi is always one of our favourite celebrations to cater. There is something special about a festival built around colour, music, togetherness and food.
Last year we had the pleasure of catering a beautiful Holi Baithak — an intimate classical musical evening with chaat, thandai and hot jalebis to begin, followed by a Kolkata Mughlai main course.
