Pindi Chile
Serves
4–5 people

Ingredients

For soaking and boiling
2 cups Kabuli chana (chickpeas)
Water for soaking

Potli:
1 tbsp tea leaves tied in muslin cloth
1 black cardamom
1 bay leaf
1-inch cinnamon stick

Spice Mix:
2 tsp coriander powder
1 tsp cumin powder
1 tsp Kashmiri red chilli powder
½ tsp turmeric powder
1 tsp amchur (dry mango powder)
1 tsp anardana powder (optional but recommended)
1 tsp garam masala
1 tsp Kasuri Methi (crushed)
Salt to taste

Final Tadka
1 tbsp ghee
1 tsp finely chopped ginger
2 tbsp chopped coriander leaves
½ tsp roasted cumin powder
