short tutorial on how I make my white chocolate ganache using belgian couverture white chocolate based on my pastry chef friend's instructions . I get my chocolate on www.pastryportal.com. They also have a page Pastry Portal and you can ask them things about chocolates and other ingredients ! Their pastry chef has introduced me into this alternative way of making ganache, and so far, this is the method that worked best for me , I hope you find it useful.


Proprotion I use : 3 parts white chocolate to 1 part heavy cream
( in this small batch i used 2 pounds of white chocolate or 32 oz to 10.6 oz heavy cream )

If I were to use milk chocolate - I use the ratio 2.5 parts milk chocolate to 1 part cream

Semi sweet chocolate - 2: 1 ratio

REMEMBER to be careful when microwaving to melt the chocolate. if you are near the perfect consistency , it may take only 10 seconds-- so don't overdo the bursts in the microwave :)
