WASTE KNOT ✨🌱

We started Waste Knot in March 2026 with a simple idea, perfectly good food shouldn’t go to waste.

It began with Pádraig Fahy at Beechlawn Organic Farm in Galway, with each of our locations taking between 5–15kg of surplus vegetables at a time and putting them to good use in our kitchens.

Much of this produce is perfectly good to eat, but can be deemed unsuitable for supermarket shelves because of its size, shape or appearance.

Waste Knot is about more than reducing food waste. It’s about respecting the time, work and resources that go into growing our food, supporting Irish growers, and recognising the value in produce that might otherwise be left behind.

Since March, we’ve saved 4.5 tonnes of food from going to waste. And now the initiative is growing, with Foley’s Tomatoes and Welgro Cucumbers coming on board too.

For this video, we brought our teams together around one table, sharing a meal made with the produce at the heart of Waste Knot and the people who make it possible.

4.5 tonnes saved so far and we’re only getting started. 🌱

A great week of learning at the Chef Academy last week! 👨‍🍳

A big shout out to Stephen from Kish Fish 🐟 for an insightful masterclass on sustainable seafood choices, and to Alan & Brian from La Rousse Foods Foods for a brilliant butchery masterclass.

Such a valuable opportunity for our students to learn directly from industry experts and reconnect with where our food comes from. 🐟🥩👏

We make choices about food every single day, often without giving them much thought.

But where our food comes from matters. Choosing Irish grown and in season supports local growers and helps build a more sustainable food future.

We want our chefs to understand that. Through our Chef Academy and experiences like our time at GIY, we’re giving them the opportunity to get closer to where food comes from and understand why the choices they make matter.

Because being a great chef starts long before the food reaches the kitchen. 🌱

That’s why our Chef Academy spent the day with our Food & Environment Partner, at GIY and GROW HQ. Harvesting fresh produce, cooking with ingredients straight from the ground, and experiencing these conversations first hand gave our students a deeper connection to the food they work with every day.

It’s experiences like these that build knowledge, inspire curiosity, and help shape the next generation of chefs.

🍓 Strawberry Semifreddo 🍓

Join our Head of Food, Gar, as he takes you step by step through creating this elegant Strawberry Semifreddo. Made with fresh strawberries, vanilla infused cream and a light, airy semifreddo base, it’s the perfect dessert to impress family and friends.

Method:

🍓 Line a loaf tin with baking paper and place it in the freezer.

🍓 Trim the strawberries and muddle the tops with a little sugar, salt and lemon juice to create a strawberry syrup. Leave to macerate, then strain. Roughly chop half of the remaining strawberries and reserve the rest for decorating.

🍓 Whisk the double cream with the vanilla until soft peaks form, then chill.

🍓 Set up a bain marie and whisk together the eggs, caster sugar and salt until the mixture reaches 72°C.

🍓 Transfer to a stand mixer and whisk on high speed for 5–6 minutes until thick, doubled in volume and cool to the touch.

🍓 Gently fold the whipped cream into the egg mixture.

🍓 Layer the chopped strawberries and strawberry syrup with the semifreddo mixture in your prepared loaf tin, repeating until full.

🍓 Cover and freeze overnight.

🍓 Finish with white chocolate ganache (optional), fresh strawberries, mint, lemon verbena and lavender before serving.

Our Chef Academy spent the day at GIY & GROW HQ with our Food & Environment Partner, Mick Kelly , exploring food choices, food security, provenance, seasonality, and sustainability.

The day brought these conversations to life as we toured the farm, harvested fresh produce, cooked lunch using ingredients straight from the ground, and each of our students sowed seeds.

A powerful day of connection, learning, and a reminder that understanding where our food comes from is just as important as knowing how to cook it.
