Chorizo, red pepper and blue cheese BANGER
Recipe
Enough farfalle pasta for 4 portions
2 roasted red peppers skin and seeds removed and sliced
1 onion sliced
2 cloves of garlic sliced
Seasoning
1tsp dried thyme
1/2 glass of white wine
4 sticks of chorizo sausage the soft type ( I used James Whelan)
3 tbsp Tom paste
1 tub of full fat creme fraiche
A good few lumps of soft blue cheese
Parmesan a lot
Chives to garnish
Method:
Begins by heating a glug of oil in your pan, lash in the onions, garlic and dried thyme - season Nd sweat until soft add a splash of water if needed
Get you pasta ON
Pour the wine into the onions let it SIMMADOWN
In with the chorizo, simmer that for a bit
Then mix in the soft roasted peppers along with any of their roasting juices
Then in with Tom paste - stir to combine simmer on low heat
Now stir in the C fraiiiiche - simmer taste and adjust to the way you FANCY
Pasta should be ready so lash it into the sauce along with a little splash of pasta water - simmer then add in most of your BLUE and some Parmesan
Stir about
Then into your heated bowl, top with MORE CHEESE and some chopped fresh chives š
And Iām telling you one thing this SUNDAG thatās a sauce worth making - even for rice of just on it own
