My daughter Aisling was supposed to get married yesterday and unfortunately the wedding had to be postponed. So I wanted to create her wedding menu at home.

To start: Roast watermelon with prosciutto, cream cheese bon bon and melon pearls.

For mains: Carlow beef fillet with horseradish gratin, baby veg and shallot and thyme jus.

For dessert: “The study of strawberries” - Strawberry cheesecake, strawberry sorbet, strawberry macaroons, fresh strawberries and chocolate ganache.

We also made her a miniature chocolate biscuit wedding cake. Chloe White finished the cake off beautifully by icing it and making a little cow for the top tier.
