Corleggy means ‘little windy hill’, and this is where we have been making our cheeses since 1985.
Our production is small as we make every cheese by hand. This starts with collecting our mornings milk from three neighbouring farms, cow’s, sheep’s and goat’s.
All of the animals here are grass fed and we think this is so important for the flavour of the milk. This subtle flavour provides the perfect base for incorporating other processes such as smoking or seaweed infusion.
