• Phase one • The Preparation

• For the first phase of the global final, the participants have 2 hours to prepare all the ingredients that will be used in their final presentation.

• Some of the ingredients I used was mango, passion, falernum, butter, coco, ginger, cinnamon, cloves and acids.

The result: Second place for the second day’s finals!

My entry for 𝗧𝗵𝗲 𝗔𝗿𝘁 𝗼𝗳 𝗜𝘁𝗮𝗹𝗶𝗰𝘂𝘀 𝗔𝗽𝗲𝗿𝗶𝘁𝗶𝘃𝗼 𝗖𝗵𝗮𝗹𝗹𝗲𝗻𝗴𝗲. A floral and aromatic drink inspired by how nature impacts global history.

𝗬𝗮𝘀𝗺𝗶𝗻𝗲

45ml - ITALICUS Rosolio Di Bergamotto
20ml - Tequila Blanco 100% blue agave
5 ml - Mango vinegar
60ml - Enhanced jasmine tea soda

Garnish: Bergamot leaf and mango juice caviar

𝗠𝘆 𝗶𝗻𝘀𝗽𝗶𝗿𝗮𝘁𝗶𝗼𝗻

The jasmine flower represents love, appreciation, hospitality, modesty, good luck, honor, and respect. Jasmine comes from the Persian name ‘Yasmine’, which means ‘gift from God’.
In Damascus, also known as the city of jasmine, the flower is grown outside government buildings, parks, and homes to signify hope and new beginnings after the war.
The Tunisian Revolution, also called the Jasmine Revolution, was an intensive 28-day campaign of civil resistance. It eventually led to a thorough democratisation of the country and to free and democratic elections.
The power of nature to impact historical events, combined with an elegant and strong brand of aperitivo.

As a side garnish suggests to be paired with fresh fish tartar (lavraki) with passion, chili, crawfish oil and mango caviar.
