Today, I want to take you on a culinary journey through the vibrant and diverse continent of Africa. African cuisine is a reflection of the continent's rich cultural heritage, its history, and its people.

From the spicy tagines of Morocco to the fragrant jollof rice of West Africa, from the tender nyama choma of Kenya to the flavorful bobotie of South Africa, African cuisine is a tapestry of flavors, textures, and aromas.

African cuisine is not just about food; it's about community, family, and tradition. In many African cultures, food is at the center of social gatherings, celebrations, and ceremonies. The preparation and sharing of meals is a way of showing hospitality, respect, and love.

One of the most striking aspects of African cuisine is its incredible diversity. With over 50 countries and more than 2,000 languages, Africa is a continent of staggering culinary variety. Here's a simple recipe for making delicious pork grills:

Ingredients:

- 500g pork shoulder or ribs, sliced into 1-inch thick pieces
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 tablespoon ginger paste
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- Optional: your favorite herbs like thyme, rosemary, or oregano

Instructions:

1. In a large bowl, whisk together olive oil, garlic, ginger paste, soy sauce, honey, cumin, smoked paprika, salt, and pepper.
2. Add the sliced pork and marinate for at least 30 minutes or up to 2 hours in the refrigerator.
3. Preheat your grill to medium-high heat.
4. Remove the pork from the marinade, letting any excess liquid drip off.
5. Grill the pork for 5-7 minutes per side, or until it reaches an internal temperature of 145°F (63°C).
6. Let the pork rest for 5 minutes before serving.

Optional: Garnish with fresh herbs and serve with your favorite sides, like grilled vegetables or corn on the cob!

Ingredients:

- 2 pounds pork shoulder, skin removed
- 1/4 cup sour orange juice (or a mix of orange and lime juice)
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1 tablespoon chopped fresh oregano
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika (optional)
- Salt and pepper to taste
- 1/4 cup chopped fresh cilantro (optional)

Instructions:

1. In a large bowl, whisk together sour orange juice, olive oil, garlic, oregano, cumin, smoked paprika (if using), salt, and pepper.
2. Add the pork shoulder and marinate for at least 2 hours or overnight.
3. Preheat your grill to medium-low heat.
4. Remove the pork from the marinade, letting any excess liquid drip off.
5. Grill the pork for 2-3 hours, or until it reaches an internal temperature of 190°F (88°C).
6. Let the pork rest for 10-15 minutes before slicing and serving.
7. Garnish with chopped cilantro (if using).

Traditional Cuban-style:

- Wrap the pork in banana leaves or foil during grilling for added flavor and moisture.
- Serve with moros y cristianos (black beans and rice), fried plantains, and grilled vegetables.

Fried Rice Recipe.
Servings for 10 people

( Chef Deepak Rajak )

Ingredients
5 cups of rice.
1 cup of sweet corn
2 cups of sliced Carrot 🥕
2 cups of sliced Green beans.
1 cup of peas 🫛
1 cup of sliced yellow pepper
1 cup of sliced red pepper 🫑
1 cup of sliced Green pepper.
Cow Liver (1/2Kg).
2kg of Chicken.
Vegetable oil.(250ml)
1 cup of sliced Onions.
Seasoning cubes 8
Thyme spice (1 teaspoon)
Rosemary spice (1 teaspoon)
Curry powder for coloring and spice (2 Tablespoons).
Salt to taste
Pepper to taste
Fried Rice

Method of Preparation
1. Cook and fry your chicken
2. Cook the cow liver, dice it into smaller pieces and fry
3. Wash, cut and sliced all your vegetables
4. Parboiled your rice with a little curry until almost well cooked, rinse and keep aside
5. Stir fry all your vegetables in oil with seasoning cubes, spices, salt and pepper to taste, add sweet corn and fried liver to it
6. Then add your almost well cooked rice to your stir fried vegetables and give it a good mix
7. Taste if seasoning is okay or will need adjustment (to your taste) cover and allow to simmer for about 5 to 10 minutes.
8. Enjoy your fried Rice with Chicken
