Doesn't freedom taste good?

We're not certain this is true (so don't quote us), but people say Oil Down came from our ancestors making do with whatever little they had - throwing everything in one pot and letting the different flavours work their magic. The magic worked! Creating our national dish! The best in the world (quote us on that)!

Today, as we honour Emancipation, we remember that our freedom was fought for, and every plate of heritage food is a taste of that victory.
