So, let's talk Lemon crumble cake π
I saw the recipe online somewhere and thought, yeah lemon is always popular, I'll give it a go!
It's not your usual sponge as it has quite a lot of ingredients including sour cream.
This morning when I cut it ready for the cake-way, I thought, mmmmm π€ I'm not sure about this. It smelt lovely so thought, I'll risk it!
It was playing on my mind all day, I would be devastated if my lovely customers thought it was dry or too dense, so in the end I had to try it.
Well, I was pleasantly surprised π
1.5 minutes in the microwave.
Crunchy crumble top, lovely soft sponge (different texture to basic sponge) with warm lemon curd running through it.
It was very very nice π€€π
And, let's face it, the pieces are huge!!! If anything, there wasn't quite enough custard for me. But then again, I am a total custard monster....I love the stuff!!! π
