This was a very close second behind Small Plates for the next takeaway, so here you goâŚ
đ˛đ˝Mexican Takeaway Friday 23rd Mayđ˛đ˝
This is one of my faves - packed with full on flavours and comforting textures but still light enough if the weather stays pleasant! Itâs got it all;
-Six hour steak chilli with smoky ancho. I know Iâve done it before but itâs SO GOOD it has to make an appearance again. With soured cream, pickled pink onions and a sachet of rice (smoky bean chilli available for vegetarians)
-Chicken taquitos: griddled, shredded chicken breast mixture rolled in a small tortilla and baked until crispy (made with halloumi for vegetarians)
-Queso fundido (chorizo, onion, chipotle and tomatoes cooked down, then topped with several cheeses, ready to melt in the oven), served with tortilla chips for dipping (no chorizo in the vegetarian version)
-Proper guacamole, made with tonnes of coriander, chilli, red onion and lime (for dipping your taquitos in, if you like)
-Elote (grilled corn on the cob with wild garlic butter and Parmesan)
And of course, something sweet to finish;
-Vanilla baked cheesecake with fresh pineapple cooked in rum and brown sugar
This is another great takeaway for all you gluten freers as every dish is easily made GF for you. Mexican cuisine uses a lot of corn which is naturally gluten free and weâre maximising it here.
