Can't believe it was 2 years to this day that I took delivery of my 500 gallon offset smoker from the now non-existent !

I haven't actually been able to use it since mid-May, due to my injuries, but I'm heading down tomorrow to give it a good clean in preparation for my a smoke next Friday, which I'm really looking forward to.

Here's to many more years of smoking on this pit 😜

3 years ago today I did my first ever cook on an offset smoker! It was supposed to be a burn without cooking anything but once I'd got the temps stable I couldn't resist putting some chicken on 😜.

Alot has happened in the 3 years since this first cook, including upgrading to a 500 gallon offset, opening my own place then leaving there 12 months later to pursue something different, still in the BBQ space.

I've felt a little lost since leaving CMQ but have a few possible things in the pipeline including continuing my pop-ups and also . Most of you probably aren't aware that I injured myself whilst on holiday in late May and am still recovering and unable to use my smoker. This should be addressed soon and I'll then be able to get smoking again 👍.

These are the boneless chicken thighs that I'll be serving in a brioche roll with coleslaw and sauces. I know my advertised menu said pulled chicken but I changed my mind and thought these would work better 😜.

Smoked a beef blade joint yesterday as a test and pretty pleased with the results. Got most of the fat rendered that runs through the middle without overcooking the actual meat, so that's a win in my books 😜

This is a cut that LeRoy and Lewis (one of the top BBQ joints in America) cook through the week rather than brisket and I can see why.

Definitely one I'll be smoking again 👍.

First smoke in a few weeks and at the smokers new location. What a cracking morning for it!

I love the point where the smoker is dialled in and the meat is on and I can sit down and enjoy a coffee and some time to reflect.

The meat today is for the Taco night I'm doing with on Saturday evening so don't forget to head down for a little taste of Mexico. We'll be making our own tortillas with maize flour (azul, rojo and blanco) so, you know, we're trying to do it right 😜

James from Nourish is really keen to work with local businesses and see his cafe utilised more in the evening. He has kindly offered me the use of his space to run a supper club, the first one being on 11th January 2025 from 6PM.

It'll be a BYOB event with a small corkage fee. We'll be serving our American Craft BBQ as small tapas style plates. The menu on this post is an example only and although we are aiming to do most of these dishes it may vary on the night.

Thank you to everyone who turned up for our first Hot Ones Chicken Wing Challenge ! Well done to Callum for finishing first, just, who received a Hot Ones pint glass courtesy of , along with a £10 bar tab!

Next one will be in 2 weeks and we'll be tweaking the format a little to make things run a little smoother.

Also, thanks to everyone who turned up for some of our normal BBQ food. We were surprised by the turnout and are looking forward to our kitchen takeover on Friday 6th and Saturday 7th December where we'll be serving our meat trays along with the brioche rolls and loaded fries.

First cook at my interim location since leaving CMQ!

Beef cheeks, Boston Butt's and of course chicken wings for the Hot Ones challenge tomorrow are all rolling nicely on the offset smoker!

We've got some cracking (and hot) sauces for the event so if you fancy giving it a go head down tomorrow a little before 7pm.
