A little preview for all those attending my Craft BBQ pop-up tomorrow night.

The weather isn't great and that chilly wind is creating some difficulties with the fire management so I reckon I'm in for a long one today... I do question my life choices some times 🤔😬😂🤣. The sacrifices we make for the craft hey!

I'll be doing Smoked Christmas hams again this year for anyone that fancies one.

They'll be smoked for a fair few hours until cooked through nicely. You can then just slice it and serve it cold or reheat it in the oven as a whole or in chunks.

I'll take pre-orders (25 slots available) with a £5 deposit so if you're interested DM or WhatsApp me and we'll take it from there 👍.

If there's any other meats you fancy just ping me and I'll let you know whether I can accommodate it.

Cook date will be Tuesday 23rd with a collection on the same day from the old Pecks restaurant site (afternoon/evening). Anyone from the Wilmslow/Handforth area can collect from my home address on Wednesday 24th.

I'm available for private catering events, so if you fancy some authentic American BBQ served to you and your guests at your next gathering then get in contact with me.

No gathering is too small, so even if you're just having a few mates round and fancy a whole brisket and some sides I'll happily do it. For reference, a whole brisket, smoked and supplied fresh out of the warming oven will be around the £150 mark, depending upon size, and will serve around 10 guests on its own or around 20-25 as part of a larger package.

I can do supply only, or a full catering package where I'll slice the meats at service.

Can't believe it was 2 years to this day that I took delivery of my 500 gallon offset smoker from the now non-existent !

I haven't actually been able to use it since mid-May, due to my injuries, but I'm heading down tomorrow to give it a good clean in preparation for my a smoke next Friday, which I'm really looking forward to.

Here's to many more years of smoking on this pit 😜

3 years ago today I did my first ever cook on an offset smoker! It was supposed to be a burn without cooking anything but once I'd got the temps stable I couldn't resist putting some chicken on 😜.

Alot has happened in the 3 years since this first cook, including upgrading to a 500 gallon offset, opening my own place then leaving there 12 months later to pursue something different, still in the BBQ space.

I've felt a little lost since leaving CMQ but have a few possible things in the pipeline including continuing my pop-ups and also . Most of you probably aren't aware that I injured myself whilst on holiday in late May and am still recovering and unable to use my smoker. This should be addressed soon and I'll then be able to get smoking again 👍.

These are the boneless chicken thighs that I'll be serving in a brioche roll with coleslaw and sauces. I know my advertised menu said pulled chicken but I changed my mind and thought these would work better 😜.
