This year’s common thread in the Xmas menu is basil. Obviously herds of wild spices roam freely across the Great Plains of this menu with plenty of brandy filled oases along the way.

Home smoked chicken, chicory, celeriac remoulade, smoked paprika mayonnaise, mint mayonnaise, spinach oil and watercress. The chicken was hot smoked with cardamom, cinnamon, rosemary, garlic and onion skins, and cedar.
