Hi! I'm Catherine and I started 'Save Thyme Cooking' in 2019, near Henley-on-Thames.

I originally set up the business to assist those with very busy lives, so that they may entertain without the stress of cooking by providing a food delivery service. 'Save Thyme Cooking' has since evolved and now offers larger party/event catering, in-house private dining as well various ad hoc events.

I always find decorating them daunting. I think it’s because the surface is so easily marked and then you have to make the whole thing all over again!

Very early start today preparing this picnic feast for a client. I hope they enjoy…

Sharing Platter: prosciutto, bresaola, truffle salami, olives, Sun blushed tomatoes (all from ), blanched asparagus, griddled aubergines and courgettes, feta stuffed roast peppers, figs, blackberries, manchego, herb cheese, crackers… and so much more!!

Quiches: sticky onion & rosemary, salmon & asparagus, spicy chorizo & red pepper

Sweets: brownies, orange & almond syrup sponge

It’s lovely to be in an open plan kitchen with a view like this one!

Vietnamese Duck Spring Rolls
Confit Tomato & Olive Tapenade on Crostinis
Crab & Avocado Cups

Main:
Sea Bass with Lemon Caper Butter, Samphire, Asparagus, Roast Baby Potatoes
Roast Chicken with Creamy Marsala Wine, Pancetta & Mushroom Sauce

Trio of Desserts:
Chocolate Mousse Torte
Orange & Almond Syrup Sponge
Raspberry Tartlet with Crème Anglais

Recipe testing today with rhubarb 🌿

I absolutely loved how this one turned out — a delicate tartlet filled with silky crème pâtissière, layered with beautifully tart rhubarb, then finished with fresh thyme, lemon zest and a scattering of rose petals.

A perfect balance of sharp, sweet and floral… this one might need a permanent spot on the menu.

New to the cold bufffet menu…

This has been tried and tested at a few events now and the feedback has meant it has to be a feature on my bigger evebts cold buffet menu.

Vegan, gluten free and full of vibrant flavours:

Roasted red peppers, stuffed with quinoa, olives, roast tomatoes, parsley, lemon, capers, toasted pine nuts with basil pesto.

Having done two retreats in the last two days, I thought it time to do a little reel…
