Today marks 8 years since I obtained my certificate in Professional Cookery Skills Level 2 at the brilliant chef academy

This was my first real step into the culinary world, in an academic and professional sense, to pursue a career in food, leaving my job of 10 years in broadcast media.

It was a transformative, self affirming and incredibly enjoyable experience.
I threw myself into the process, stayed near the Dorset coastline in a completely new environment, with no qualms about my unknown future path (these came later…)

For me, simply having a natural ability to ‘cook tasty food’ wasn’t enough, I wanted the professional skills, knowledge and experience to propel me further. And this course did just that.

It was everything I expected from a culinary course and a lot that I didn’t; namely emotion and feeling like I had found my place in the world.
This really was delving into the unknown. But it filled me with the desire, confidence and belief that I could carve out a new vocation for myself.

Turns out, 8 years later, it turns that decision was one of the best decisions of my life.
Onwards and upwards!
