Making focaccia is pure happiness. The real stuff…not the bouncy cake type but the crunchy, oily, salty kind that is a vehicle for all the best salumi, prosciutto and my favourite of all, Mortadella! It’s a childhood staple in Italy and one of the first things you give your children to eat. Again I have to say 🤗😋🥰🇮🇹

It’s minestrone time of year! One of the best things about Autumn and the days getting shorter and colder is the food!
One of my favourite things is !
You can use any veg you like really but I like to start with a base of carrots, onion, celery and potatoes. Garlic, sage and rosemary are great additions. I always add a leafy green chopped up such as spinach, Swiss chard or kale ( ) white beans and a tin of tomato pulp plus any other veg you like!
It’s the ultimate comfort food. 🤗🇮🇹🩷

Pasta al Forno or Lasagne (made up of layers of sheets of lasagna pasta)
An absolute classic of Italian cuisine. A family Sunday lunch favourite in and .
It requires hours of work and a lot of love to make it properly. A ragù needs at least 4 hrs of gentle simmering and the fresh pasta should be egg rich and rolled as finely as possible.
Just the right amount of bechamel to hold it together without it being sloppy on the plate!
It’s pure for me!

Simple pan seared pork loin chop with garlic and sage. Rich smooth sauce of roasted peppers, tomatoes, garlic and onions. 🤗
Drizzled with the best Italian extra virgin olive oil. 🍅🌶️
