You’ll hear us talk at some length about the importance of provenance in our kitchen. To us, knowing the origin (pun unashamedly intended) of the produce we use to build our plates is everything.⠀

In almost every instance, we’ll buy direct from producers and suppliers which is good news for everyone. Here’s why:⠀

1. We know exactly where our ingredients are coming from. Take the crab in the above as an example. We buy direct from because we know what they’re about and we like what we see. Even buying through a reputable fishmonger can blur the picture. We don’t just want to know where our produce comes from, we want to know who caught it.⠀

2. It helps us control how much we’re using and minimise waste. We’ve always found that having direct relationships with your suppliers enables you to have a better sense of what you’re doing and how you’re doing it. We hate waste so for us, this is huge.⠀

3. Perhaps the most worthy incentive for us, is that it helps us support the smaller guys. By going straight to source we’re cutting out the middle man and putting more money in their pockets. We’re a small concern ourselves so know exactly what it feels like to need to make every penny count.⠀
