In 2014, after a decade as an English teacher, I decided I'd had enough, so left it all behind to embark on a new career. I wasn't certain what that career would be exactly, but I knew I loved cooking and the world of food and drink, so that's where I began. After a wonderful month training at The Grange in Frome, Somerset, I knew I was on the right lines, so set about getting as much experience a

s I could: working as a cook in several cafés around Edinburgh; assisting stylists on photo shoots down in London; work experience at Olive magazine, testing recipes and gadgets as well as writing, and anything else that came my way. However, being in my mid-thirties, I needed to accelerate the process and decided that the only way to do this was through more cookery training, so signed up for the Intermediate/Advanced course at Edinburgh New Town Cookery School. It was a fabulous three months! It was hard work, but worth every minute; I learned so much, and the fact that I gained a Distinction proved to me that I had chosen the right path. Since finishing at ENTCS, I have worked as a private chef; worked freelance for the Edinburgh catering companies, Appetite Direct and Ginger Snap Catering; worked on photo shoots in both London and Edinburgh for magazines, cookbooks and brands; taught regular classes at ENTCS, and worked for two PR agencies that specialise in the food and drink industry. With all that experience behind me, I am now going it alone and feeling pretty excited about it all. Been rediscovering the joys of baking my own bread over the past couple of weeks, thanks to danlepard and his book The Handmade Loaf. Firstly there was no bread in the supermarkets, so it was a necessity, and then there was no yeast, so that called for creating my own sourdough starter; got a white and a rye one on the go. The starter was finally ready to bake with, so made my first couple of loaves yesterday for the first time in ages. Pretty delighted with the result and it went down very well at breakfast!

I haven’t posted anything in months, in spite of taking lots of pictures, but I couldn’t resist sharing this one...all the time spent basting and turning the tin in the oven to ensure an even browning paid off with this gorgeous, glistening ham. Served with the classic accompaniment of parsley sauce, peas and buttered new potatoes.

Shoot dinner for 19 on Saturday night with tomato and mozzarella salad to start, duck breast with a cranberry and red wine jus, roasted potatoes and homegrown veg; instead of a pudding or cheese course, they opted for a gluten-free twice-baked cheese soufflé with watercress, but I didn’t have time to get a picture of that dish as they had to go out quickly before they lost their height!!

Yesterday’s shoot lunch...you can’t beat a pie for some autumnal comfort! Yesterday it was a chicken, leek, mushroom and ham pie served with garlic roasted baby potatoes and a medley of green veg; a warming pear and ginger crumble followed with ice cream (and/or cream and/or custard...just to gild the lily!), and a cheeseboard with grapes and fresh figs rounded off the meal.

I’m a bit late posting this as I was too busy enjoying the sunshine and a week off last week, but what a fab week it was cooking for a lovely group of people at the beautiful House of Glenmuick near Ballater. I wish I’d been able to get more pictures, but I was often too busy plating up to stop!
