Poached pears, burnt butter buttercream, some sprigs of rosemary and the last of the bright nasturtiums.

Feeling inspired today, so much so that I’m planning my own birthday cake. I’ve never made my own cake, but it feels very indulgent. Something beautiful, the way I like it 💗

After the intensity of the summer I’m so grateful to be able to enjoy a few more moments to pause, gather and reset.
Although, I don’t think I’ll ever grow tired of baking, which is a relief as I’m currently working a few days a week as the in-house baker Prideaux Walled Garden 🌿 in Padstow.
It feels such a privilege to be able to use the garden produce in my bakes.
Some of the sweet offerings on the menu this September have included Kea plum and cardamom cake, fig leaf and olive oil cake, and a quince frangipane tart all decorated with beautiful seasonal flowers from the garden💗

I say this every year but despite being a total sun worshipper I LOVE autumn, and this cake is giving me Brambly Hedge vibes.
Maybe that’s where my love of all things autumn started. As a child I used to lose myself in the tales of Brambly hedge, daydreaming about living at Crabapple Cottage baking pies and cakes, and gathering berries for homemade syrups and jams.

A few cakes from the last week as the season slowly turns from summer into autumn.

All gloriously decorated with the stunning flowers grown Prideaux Walled Garden

Kea plum and cardamon, fig leaf and olive oil, and a beetroot and chocolate cake; also affectionately now called the “Helena’ cake.

One of the highlights of the week was being asked to make a cake for a lovely couple who were having a gathering to celebrate their recent wedding….whilst at the same time also meeting Helena Bonham Carter who asked questions about the cake I was making….
I’m sorry we were so hopeless and playing it cool that we didn’t even offer you a drink Helena 🖤

Earlier on in the year I was lucky enough to be involved in a wedding shoot Eco Park, Porthtowan with some of Cornwall’s leading creatives and suppliers in the wedding biz.

The brief was to reimagine the Mediterranean in a Cornish setting whilst maintaining the ethos of the Eco Park, Porthtowan creating a wedding working in harmony with the environment and not costing the earth.

The cake was vegan, and the flowers the first of the season, were grown locally by Perdita griffith-gilham and Prideaux Walled Garden
