Some announcements just feel different. This is one of them ❤️
We’re incredibly proud to welcome Crystal to the Chef de la Maison family. 👨🍳
Crystal is currently studying at Peterborough Regional College’s culinary school — the same place the OG Chef Nathan trained. That full circle moment is not lost on us. It genuinely means something, and then some.
In July, Crystal joins us at Allia Future Business Centre for a full month of induction, immersing herself in every aspect of Chef de la Maison.
Then in September, when her college schedule is confirmed, she steps into a brand new role we’ve created especially for her: Academy Chef.
This role brings a dedicated, chef-inspired focus to our Academy programme. Crystal will work on a live kitchen line alongside our brigade 👉 handmaking butter, breads, cakes, bakes and sauces, developing specials, building menus, and bringing real food science and consistency to everything we do.
She’s already gained outstanding experience at The Royal Automobile Club, Pall Mall, working alongside some of the best in the business. That foundation, combined with what she’ll build here, is going to be something special.
She’ll be supported by expert caterers and bakers Emma and Toni, master barista Sanjay, and The OG Chef. And she’ll work directly alongside the young people on our Academy programme showing them what culinary craft really looks like from the inside.
This is the perfect extension to the brilliant work already being done by the instructors at PRC and our own Academy team. College and real world kitchen. Theory and practice. Side by side.
