Last night, it all kicked off with miniature brioche. And when I say miniature, I mean 9g dough balls, shaped, baked and filled with the most delicious lobster.

Canapés made by chefs who work far too bloody hard but care an awful lot about what they put in front of you, alongside an amazing front of house team who make sure every guest feels looked after. Every little bite matters, and we want you to enjoy every single one like a pro.

And just like that… we’re at our penultimate wedding of 2026!

Honestly, where has this year gone?

Constant emails, shed loads of prep, long days and last minute changes… but do you know what? I wouldn’t change a thing.

Seeing people happy, eating great food and celebrating with their favourite people is exactly why we do what we do.

Great food, cooked and served by our Dish Cornwall team who genuinely listen, care and want every wedding to be bloody brilliant.

And then there’s Caroline, a wedding planner like no other, bringing it all together with Teri and Faye, plus Anna’s incredible flower arches that stop you in your tracks.

My little black book of amazing people is growing, and I bloody love it.

One more wedding to go. Let’s finish 2026 properly.

Never an easy journey becoming a chef.

I suppose I fell into it, and there have been plenty of moments when I’ve wondered why the hell I’m still doing it.

But then there are the people.

Paul Ripley, my rock, often without me even realising it.

David, you deserve a bloody medal for putting up with me through the good, the bad and everything in between.

Still here. Still cooking. Still grateful.
