🌿 Lemony Summer Rice with Courgette & Herbs!
Light, zingy, and packed with seasonal goodness - perfect as a side or a base for grilled meat, fish or veggies.
Ingredients (Serves 4):
– 250g basmati or long-grain rice
– 1 medium courgette, diced
– 1 garlic clove, finely chopped
– Zest and juice of 1 lemon
– Handful of chopped fresh herbs (parsley, mint, basil or a mix, get creative!)
– 2 tbsp olive oil
– Salt & pepper to taste
– Optional: crumbled feta or toasted almonds to finish
Method:
1. Cook the rice according to packet instructions. Drain and fluff with a fork.
2. Meanwhile, sauté the courgette in a little olive oil until golden and soft (about 5–7 mins). Add the garlic and cook for another minute.
3. In a large bowl, combine the rice with the courgette mixture. Add lemon zest and juice, herbs, olive oil, and season generously.
4. Toss gently and serve warm or at room temperature. Add feta or almonds if you fancy.
