If you’re going full bakery vibes today, here’s a simple way to get that golden, crackly crust:

Quick crusty bread method (no stress, big reward):
• Strong white bread flour, yeast, salt, water
• Mix into a slightly sticky dough (don’t overthink it)
• Let it rise until doubled (1–2 hours)
• Shape gently (keep those air bubbles!)
• Final rise ~30–45 mins
• Bake HOT (230°C) with a tray of water in the oven for steam 💨

Pro tip for that chef’s kiss crust:
Slash the top just before baking + a blast of steam = that bakery-style crackle.

I came from Brooklyn, homeless at 13, moved to the UK in 2002, built my business from the ground up, became an award-winning chef, and now raise a daughter who’s an international Taekwondo athlete.

Weak? Never. Tested? Daily. But every obstacle just sharpened me.

The meaning of Irony, someone sent me a message for employment, here in South Wales. This was my answer:

Sorry, but my business is not employing anyone, nor will it be in the future. Given my experiences of racism and institutional bias here in Wales, I find it ironic to be approached about offering opportunities in this context. I worked hard for my qualifications and built my business from the ground up precisely because of the barriers created by systemic discrimination within the Welsh Labour government and the police. I would encourage you to look toward Welsh companies for employment opportunities, as that is where your efforts will be better placed.
