This dish came from a trip to Thailand that really stuck with us. The flavours, the balance, the way everything felt light but still full of depth!

Stone bass with pak choi, a Thai coconut sauce, and sweet potato fondant is our way of bringing a bit of that inspiration onto the plate.

A proper British classic, and still one of our all-time favourite desserts. Soft sponge, rich caramel sauce, and toffee fudge ripple ice cream melting over the top 🤤
