I am Alla, a mom, a cook, and the creator of Everyday Yummy! As a mother of two sons I know how important it is to give your child nutritious and healthy food and how challenging it can be at times. I have rediscovered Russian cuisine for myself and for my boys. It only contains natural quality ingredients and doesn't involve frying - and kids love it! Pelmeni (Russian dumplings) have solved the d

inner problem so many times. Not always you have your dinner all planned out or set ready for you. Pelmeny can keep frozen for up to 3 months, so any time pop them out of the freezer, put in a boiling water, let them boil for 10 minutes and the dinner is ready! Serve them with sour cream and a side of steamed veggies or salad. Being Russian and knowing what the authentic taste of Russian food should be like, I am taking pride in preparing food that kids and adults enjoy alike. Did you know that the original version of the salad Olivier (or also known outside of Russia as Russian salad) was invented in the 1860s by Belgian Lucien Olivier, the chef of one of Moscow's most renowned restaurants? This version contained such delicacies as grouse, veal tongue, caviar, crayfish tails and smoked duck. In post-revolutionary Russia, the following more economical ingredients were substituted for the originals: grouse–sausage, crayfish–hard-boiled egg, cucumbers–pickled cucumbers, olives and capers–green peas.
I am offering a traditional soviet times version made from fresh, high quality ingredients: potatoes, boiled chicken, boiled eggs, Russian pickled cucumbers, carrots, green peas (optional). You can order it as an appetizer or a meal in itself!

I hope you all had a very joyful and full of pleasant moments Easter Day yesterday!
I have been busy catering for a very special Easter brunch hosted by Delia. We worked out a menu that would suit the sophisticated tastes of Delia's guests. I prepared:
- Spanish tortilla filled with bacon, onion, cheddar cheese, potatoes and portobello mushrooms
- a stack of buttermilk bliny
- bliny filled with Philadelphia cream cheese, chives and smoked salmon
- Vatrushka (a type of Russian pirogue open on top and closed around the sides which is filled with cottage cheese and strawberries)
- banana whole meal muffins with flax seeds and walnuts
- yogurt parfaits (creamy vanilla Greek yogurt with passion fruit coulee on top)

It's borsch for dinner today. Almost every Eastern and Central European country cuisine has it's variation of Borsch. The main ingredient is beetroot, that gives the soup the rich red color. The Ukrainian variation of borsch uses pork broth for the base, whereas Polish version is strictly vegetarian with mushroom dumplings and is served as a special Christmas Eve treat. I am offering the Russian version of borsch, which is made of beef broth, beetroot, organic cabbage and other wholesome vegetables.
You can serve it to your guests as an appetizer or it can be a meal in itself. You may also order it for your family and have a day or two off from cooking, as the flavor gets even better the next day. Enjoy the hearty soup with chunks of beef the Russian way: served with sour cream, fresh chopped herbs and rye bread!

Medovik (Russian honey cake) is ready to be collected. I made an extra one in case one of you would like to finish off your Friday dinner with a piece of this delicate and fragrant cake. I used 100% Pure New Zealand Honey for the dough and Mundella Sour Cream (all natural ingredients) for the cream. It is sold in quarters or halves, or you can go for the whole cake too. Hurry to place your order before it's all gone! ;)
