One of my favourite dishes to make is this little number
"Ensaladilla rusa con atún"

•Steamed and diced potato and carrot
•Grated boiled egg
•Finely diced Red onion
•Manzanilla olives
•Parsley
•Tuna - atún
•Pickled green chillies

All bound in spanish olive oil Aioli and finished with spainsh sherry vinegar and dulce pimentón.

Served on toasted baguette

This little number took days of work- marinating overnight in Rioja,
6 hours of slow cooking yesterday left to cool and then finished tonight!

Slow cooked beef cheek in Pedro Ximenez spanish sherry, olive oil and butter mashed potatoes topped with crispy leeks
