Late summer brings bountiful amounts of hedgerow produce. Every walk, run, bike ride we go on, we can’t resist picking a bit to help see us through the darker, more savoury months. Blackberries must be the antioxidant king, SO good for you & packed with vit c & k, why not indulge a little?!

One of our very favourite things to do with them is make blackberry madeleines. Little fluffy sponges, enriched with milk and butter make the perfect side to a dessert or as an accompaniment to your evening coffee. We nestle a blackberry in each one, and as it cooks, its jammy texture oozes into the sponge.

Get them straight from the oven, roll in clove sugar whilst hot, and they probably won’t even make the dinner table!

After 5.5 years in business, the team & I have grown the company to a point where we now need to recruit some extra troops! Company overview: we are based , that in itself is a perk of the job! We are a small, yet mighty private chef & delivery company. Over the past 10 years, Harry has built a very strong network of very loyal private clients across UK, some have become great friends of ours, which makes this role incredibly important for us. We provide everything from super high end private experiences, private cheffing for wealthy &/or celebrity clients, to simple suppers, bbq’s & our much loved weekly Market Menu service. Each and every of our jobs are equally important and valued, and are tailored to each client’s needs and expectations.

What we are recruiting for: the role we are fulfilling is a ‘Private Chef/Kitchen Manager’

We are offering a flexible work schedule which varies week in, we out, offering the right candidate a real range of work, targets and experience. The right candidate needs an amazing work ethic, will need to have had experience across a variety of levels of cookery. From Michelin starred experience to fast past event catering, and everything in between, also with a broad knowledge of different cuisine’s. A driving licence is imperative, along with management skills, & experience working one on one with private clients.

After a glorious Italian supper at some very good friends of ours on Sunday, I was inspired to try and nail my ciabatta recipe. I have been using the same old (pretty naff) recipe for 5 years, about time I sorted it out. Every day this week I have trialled new hydration levels, emitting olive oil, adding more salt, fermenting for too long/not long enough etc, you get the picture. It’s the part of my job that i absolutely love…

Anyhow, I think today we hit the jackpot… 95% hydration, T80 rustic, 24hr fermentation, fridge & fold like our sourdough & a screaming hot oven. See first picture and last video for the end result - with all the other attempts in the middle!

Now to pan fry in gorgeous olive oil, and smother in grated fresh tomatoes & garlic. 🧄 🍅

If you know the sourdough trade, then you know this heat doesn’t do well to the dough - however, today’s batch was blooming marvelous! (Must have been the 100’s of times in & out of the fridge to regulate the temperature)!!!

Here is Jude modelling her bouncy buns … Did you know, if you book or then you get our bakes on arrival, completely on us! Warm caraway sourdough & our signature carrot & coconut cake - what more can you ask for?!
