The first Hen Party of the 2025 season is upon us…

We catered for a group of 28 celebrating the bride-to-be.

Serving up a three course seasonal menu before the night really kicked off!

Everything from setup to clean down is handled by us at Mark’s Kitchen.
On the menu for this group:
• Marinated Tomato bruschetta
• Goat’s cheese salad
• Thai fish cakes with chilli dipping

• Prawn Thai green curry
• Pork tenderloin, sautéed potatoes, masala wine sauce and seasonal vegetables

• Raspberry cheesecake
• Sticky toffee pudding

We bring the food, the team and you enjoy the party.

PAD THAI 🥢

Made this recently and it reminded me why I love sharing the stories behind dishes like this one.

We often think of Pad Thai as one of the most authentic Thai dishes, and it is the national dish of Thailand. Known for its sweet, salty, spicy flavours, it’s a proper crowd-pleaser.

But here’s something most people don’t know…

Pad Thai isn’t some centuries-old tradition. It’s actually a wartime invention.

During WWII, Thailand suffered a shortage of rice, so the government encouraged people to eat noodles instead.

Add some native Thai flavours and Pad Thai was born.

Today, it’s not only a Thai staple but a favourite around the world.

With tamarind, coconut sugar, fish sauce, scrambled egg, crushed peanuts, beansprouts and sautéed browns.

A big squeeze of lime. A hit of chilli.

Paired with a protein of your choice. Mine is prawns.

And that moment where everything just works.

Sometimes the best food isn’t the one with the fanciest name.
Sometimes it’s just about doing the simple things really well.

Taking a hearty classic and making it really, really good.
Like bangers and mash. Nothing complicated, but when it’s done right, it’s perfect.

It all comes down to quality ingredients.
Fluffy mash, proper sausages, rich onion gravy.
