Describe yourself in three words
Creative, passionate, hungry.

What’s your favourite part of working as a chef?
Getting to turn an idea into something tangible and tasty.

What’s your desert island dish (to eat, not cook)?
A spicy italian cold cut sub sandwich – I could have one everyday for the rest of my life.

What’s your favourite dish that you’ve designed for the events menu during your time and why?
I loved designing the courgette flower dish on our spring-summer menu. I wanted to make sure our plant-based main had just as much thought put into it as the rest of the menu and this one involved several different elements that made use of every part of the courgette. We stuffed the courgette flower with a tofu, lentil and veggie ‘nduj fillinga, which we served on top of crispy polenta with caponata wrapped in thinly sliced courgettes.

What’s your most unpopular opinion?
Mac and cheese is not good.

When you’re not working, you are...
Feeding the neighborhood cats.

What fictional character are you most similar to?
Monica from friends – she’s a chef with dark hair!
