Does anybody else find watching food being prepared strangely relaxing?

There's something about the layering and rolling of a salmon terrine that's rather satisfying.

Especially when you know what it's going to look like at the end!

This is our roast and smoked salmon terrine, which we serve with dill mayonnaise and homemade soda bread.

We prepared it as part of a recent wedding menu tasting, giving our couple the chance to see and taste the dishes before making their final menu choices.

What I love about this sort of kitchen footage is that you get to see the process behind the finished plate.

Not just the pretty end result.

**Now, here's a question: are you a smoked salmon lover, or is it one of those foods you've never quite taken to?**

We think beetroot has a bit of an image problem.

For an awful lot of people, their first experience of beetroot was a slice of something purple and vinegary, straight from a jar.

And while there's absolutely a place for pickled beetroot, it's not the only way to enjoy it!

For this vegetarian dish, we roast and smoke the beetroot, bringing out its natural sweetness and adding a wonderful depth of flavour.

Then we serve it with homemade ricotta and beetroot olive oil powder.

Different flavours, different textures, and a rather lovely way to show off an ingredient that doesn't always get the appreciation it deserves.

This was one of the dishes we prepared for a recent wedding menu tasting.

Twenty-something seconds of video.

Rather more than twenty-something seconds of work.

This is our confit chicken and apricot ballotine with apricot gel.

What you're watching is the final assembly of just one canapé.

The chicken has already been cooked and prepared, the ballotine made, the gel prepared and all the little finishing components organised.

And then we get to put it all together, one piece at a time.

The final photograph shows how the same canapé was presented at a separate event, ready for guests to enjoy.

It's quite a lot of work for something designed to disappear in a mouthful or two.

But there's something rather satisfying about seeing all those little details come together.

**So, be honest: when you're at an event, do you stop to admire a beautifully presented canapé, or does it go straight in your mouth?**

Right, we have a very important question for you today.

Possibly the most difficult decision you'll make all week.

Imagine you're sitting down to dinner and you're offered these five dishes, but you're only allowed to choose TWO.

1. Lemon and herb porchetta, pork crackling

2. Seared cod, chorizo, braised butterbeans

3. Slow-cooked fillet of beef, jus, horseradish crumble

4. Squash and spinach tart, toasted seeds

5. Poached herb chicken breast, Madeira jus

They're all dishes from our sharing-style wedding menu, but today we're making the rules rather unreasonable.

You can only have two.

And no, you can't have a little bit of everything. That's cheating!

Hands up if you've only ever eaten choux pastry filled with something sweet!

Profiteroles? Absolutely.
Chocolate éclairs? Yes please.
Savoury choux buns? Now we're talking.

Choux pastry is wonderfully versatile. It starts as a cooked dough, then puffs up in the oven to create a light shell with a hollow centre - perfect for filling.

For these handmade canapés, we've added chives to the pastry and filled the baked shells with whipped goat's cheese and honey-glazed fig.

They're light, creamy, a little sweet and a little savoury.

And rather more interesting than your average cheese sandwich!

Well, this was a fun one!

Last Saturday, we were at Pushkin House in London catering a birthday celebration inspired by the wonderfully outrageous world of Rivals.

There was live music, plenty of fizz, cocktails, delicious canapés and a fabulous party atmosphere.

And because we never like to miss an opportunity to have a little fun, the Salters team got into the spirit of the occasion too!

We love events where the host's personality really shines through. It's one of the things that makes private celebrations so different from one another.

And yes, underneath all that glamour, there was a fair bit of hard work happening behind the scenes. But that's rather the point - the guests should be enjoying the party, not worrying about what's happening in the kitchen!

Who remembers the 80s? And more importantly, would you willingly revisit the fashion?

Calling all little firefighters!

Last week, we had a rather different challenge in the Salters kitchen: a chocolate fire engine birthday cake for Cillian!

It's one of the things that keeps our working week interesting. We can go from preparing an entire wedding tasting menu to making a fire engine out of cake and chocolate.

Both require planning, patience and a fair amount of concentration. One just happens to have wheels!

We love the opportunity to get creative with celebration cakes, especially when the brief is something a little out of the ordinary.

So, here's a question for you...

What was the most memorable birthday cake you had as a child?

This was a wedding tasting for four people. Yes, really. 😂
Last week we welcomed Teri and her party for their wedding tasting — and when we say tasting, we don't mean choosing two or three dishes for them to try.
We prepared food from our full canapé and sharing-style menus so they could taste their way through the options, compare favourites and start deciding exactly what they want their guests to eat on their wedding day.
That means an enormous amount of prep for just four places at the table — but that's rather the point.
We don't think couples should have to choose one of the most important parts of their wedding from descriptions on a page. We want them to taste it, talk about it and choose the dishes they genuinely love.
And judging by the state of the kitchen, we certainly gave them plenty to choose from.

Ever wondered how much work goes into something you can eat in three seconds?

These chocolate and espresso tartlets with toasted marshmallow are a rather good example.

There's the preparation, the individual components, the assembly, the finishing… and then they're gone in a couple of bites!

But that's exactly what we love about creating bespoke canapés and miniature desserts.

Whether we're catering a corporate reception, an intimate celebration or a larger private event, the attention to detail doesn't change.

A little something for a milestone birthday!& ;

We recently made this bespoke cake for Helena's 40th birthday, with a simple buttercream finish, chocolate drip, fresh berries and a personalised topper.

There's something lovely about making celebration cakes. Every one is a little different because every celebration is personal.

And while we've been sharing plenty of corporate catering recently, birthday cakes and private celebrations are another part of what we do.

Three bites. One luxury event.

We recently catered an intimate event for 10 guests at Trudon in Seven Dials, with a beautifully simple brief: two savoury canapés and one sweet per person.

The menu:

• Treacle & citrus-cured salmon, crème fraîche & tapioca cracker
• Savoury chive choux, whipped goat's cheese, honey-glazed fig & pistachio
• Chocolate & espresso tartlet with toasted marshmallow

With a small menu like this, there's nowhere for anything to hide - every bite has to earn its place.

And that's rather lovely.

Bespoke catering doesn't necessarily mean *more*. Sometimes it means creating exactly what's needed for the event, the guests and the setting.
