Ever cooked something that looked lovely but just seemed to be missing something?

The answer might not be another ingredient. It could simply be how you season it.
One of the biggest lessons from professional kitchens is to season in layers, not just at the end.

Add a little seasoning as you prepare your ingredients, adjust it as the dish cooks, then taste again before serving.

This builds depth of flavour throughout the dish, rather than leaving everything to the final sprinkle of salt.

A little thank you note that genuinely made our day.

We had the pleasure of catering for Steph & Tom’s wedding at the beautiful Bromley Old Town Hall, and receiving a message like this afterwards is exactly why we love what we do.

The food, drinks and chocolates are obviously very welcome, but hearing that their guests noticed how friendly, attentive and fun the Concerto team were means just as much to us.

And we absolutely loved the line about our “impossibly high” sausage roll standards!

Thank you, Steph & Tom, for trusting us to be part of such an important day. We hope you enjoy plenty more of Fiona’s truffles in the years ahead!
