Shermin founded Najma's Catering & Events in 2011 and began trading at markets stalls and festive events in South West London in 2012. Najma’s gained recognition within it’s first year of business winning the ‘Highly Commended’ award in the category of Best Takeaway and Delivery at the 2013 Time & Leisure Food & Drink Awards for Surrey and South West London. The following year Najma’s received com

mendation again in the same category. Shermin turned her award-winning business into a cookery school during 2013. Classes are taught in her and level-5 food hygiene rated home kitchen. Most recently Najma’s was awarded Most Innovative Indian Cooking Class Provider - London by Lux Life Magazine.

In my favourite place with my favourite food after a very hot and sticky commute from London Bridge 🥵 But I so love these longs summer evenings where I can sit peacefully in my Moroccan inspired garden retreat, beneath the flawless blue sky and listen to the gentle sounds of nature 💚

Here’s the recipe for my Summer Garden Salad:

INGREDIENTS

100g sweetcorn
1 cucumber
2 celery sticks
1 green pepper
1 red pepper
1 apple
100 Greek feta
Handful of baby spinach leaves
Course black pepper
Chiili flakes (optional)
2 tbsp lemon juice
1 tbsp olive oil

Simply chop up the vegetables and feta however you like, except the spinach and sweetcorn. Mix all the vegetables and feta together. Add in the pepper and chilli flakes, if using. Mix the olive oil and lemon juice in a small bowl and then drizzle over and fold into the salad.

Simple and delicious. Use a ripened Alfonso Mango 🥭 instead of apple for a more exotic sweetness ❤️

Makes 4 generous servings.

This salad is reminiscent of my recent Moroccan yoga retreat where we indulged in the most delicious salads for our post yoga breakfast 😋
I am loving these hot summer days as I really wasn’t made for our grey UK weather! I feel inspired to create healthy and colourful colourful dishes each day to be enjoyed alfresco in the garden.
So grateful and blessed Alhamdulillah 🤲🏼

RECIPE

Ingredients
2 celery sticks
1 yellow bell pepper
1/2 cucumber
100g sweetcorn
100g Greek feta
Rocket leaves
1/2 tsp smoked paprika
1/2 tsp source black pepper
2 tbs pickled jalapeños (optional)
1/4 tsp chilli flakes (optional)

Method
Chop all the veg and cube the feta and mix in will all the dry ingredients.

My Vegetrian Thali class will now run on selected dates at the much coveted Tooting venue. Spaces are limited to FIVE ONLY so book early to secure you place!

My take on a healthy no-oil Tostada 😋

4 wholewheat tortilla wraps
1 cup basmati rice
Pinch of saffron
1/2 tsp salt
Choice of protein (mince, pulled chicken or plant based protein)
1 broccoli head + 1/2 tsp crushed chilli, 1/2 tsp cumin, 1 tbsp oil

How to make your Tostada:

1. Prepare your protein of choice and set aside.
2. Steam the broccoli. Mix in the oil, chilli flakes, cumin and salt and stir-fry for 7 mins at 180 degrees C. Set to one side.
2. Rinse the rice and place in 1.5 cups of boiling water with 1/2 tsp salt, a pinch of good quality saffron and 2 tblsp oil. Bring to boil, cover tightly and cook on low for 20 minutes.
3. Meanwhile, place a tortilla in a deep microwaveable dish and press down into a bowl-like shape. Cook on high (based on 900W) for 3.5 mins. Allow to stand for 30 secs before removing. Repeat for all the tortillas. Feel free to use an air fryer for the step if you prefer.
3. To build your Tostada, fill the tortilla with 1/3rd of protein, rice and broccoli. Top with seasoning or sauces of your choice and enjoy!
