My take on a healthy no-oil Tostada 😋
4 wholewheat tortilla wraps
1 cup basmati rice
Pinch of saffron
1/2 tsp salt
Choice of protein (mince, pulled chicken or plant based protein)
1 broccoli head + 1/2 tsp crushed chilli, 1/2 tsp cumin, 1 tbsp oil
How to make your Tostada:
1. Prepare your protein of choice and set aside.
2. Steam the broccoli. Mix in the oil, chilli flakes, cumin and salt and stir-fry for 7 mins at 180 degrees C. Set to one side.
2. Rinse the rice and place in 1.5 cups of boiling water with 1/2 tsp salt, a pinch of good quality saffron and 2 tblsp oil. Bring to boil, cover tightly and cook on low for 20 minutes.
3. Meanwhile, place a tortilla in a deep microwaveable dish and press down into a bowl-like shape. Cook on high (based on 900W) for 3.5 mins. Allow to stand for 30 secs before removing. Repeat for all the tortillas. Feel free to use an air fryer for the step if you prefer.
3. To build your Tostada, fill the tortilla with 1/3rd of protein, rice and broccoli. Top with seasoning or sauces of your choice and enjoy!
