Cuisine By Bethany Bespoke Gourmet Catering for all family occasions, celebrations, Dinner parties and Picnic lunches

I’m a freelance cook based near to the northwest town of Knutsford. I cater for a wide range of occasions from intimate dinner parties to afternoon teas, larger buffets and family events. I also produce a range of interesting jams and chutneys, and I love to make cupcakes too! For 7 years I worked as a chef in France on large converted Dutch grain barges for French Country Waterways. The barges op

erate as luxury hotels cruising on the waterways all over the French countryside. I produced everything from hearty cooked breakfasts, to fresh and healthy salad lunch buffets and elegant four course evening meals. I had full responsibility for planning my own menus and sourcing fresh, local ingredients. This was a fantastic opportunity to challenge myself with both modern innovative dishes and traditional classics using some of the best quality ingredients available. One of the important lessons I learnt whilst cooking in France was that fresh, top quality seasonal produce is an essential element in creating good food and delicious meals. The french really have a passion and pride for their food and produce, their local food markets are always brimming with an amazing array of beautiful fruit and vegetables from the region. Returning to live and work in England, it’s wonderful to see that this passion and pride is here also, along with a fantastic ability to embrace new flavours and to try unusual cuisines.

This New Year’s Eve, my lovely team of brilliant ladies and I catered a fab afternoon canapé party. As always, 🙄 I forgot to take photos apart from these few.

On the menu,

Creamed goat cheese on rye toast with sweet pickled rhubarb and shallots topped with mint

Moroccan beetroot purée on crackers topped with spiced crumb and roasted chickpeas

Taco spiced king prawns on corn tortillas with mango and lime salsa

Sriracha, honey and soy glazed chipolatas topped with sesame seeds

Blinis topped with smoked salmon, horseradish crème fraiche, lemon zest and dill

Hoisin lime shredded duck on cucumber with spring onions and sesame

Then some sweet bites too…

Gold dusted brownie bites

Teeny Bailey’s tiffin

Mini blood orange curd mousse and berry tartlets

Mini raspberry meringues topped with limoncello cream and freeze dried raspberries

Alibi Altrincham were also there providing a great pop up bar for the event. Professional and seamless operation from them.

Also beautiful pizzas by Blooming dough pizzas but for some reason, FB won’t let me tag them 🤨
They made some amazing tasty pizzas for guests too.

But are a tasty protein snack made from just cottage cheese baked sprinkled with everything bagel seasoning, Aldi version!

Pure protein snacks are valued in our house with some dedicated gym goers and a type one diabetic 🙌🏼💙

This weekend was Thai!

A feast including Beef Rendang, Thai green veggie curry, red chilli and coconut chicken curry with cashew nuts and peppers, sticky rice, a rice vermicelli salad with spiced coriander lime chicken mince dressed with sesame oil and soy sauce, Thai inspired carrot and cabbage salad dressed with mango and lime dressing, shallot, chilli, mint and basil dressed cucumber salad.

Finished with cheesecake, brownies and white chocolate and raspberry almond pastry tart.
