Pasta con Acciughe e Mollica (past with anchovies and breadcrumbs).

Garum, an essence made from fermenting salted fish was commonly used to flavour alot of Roman cooking, although this has now disappeared from modern cooking salted sardines and anchovies occurs in Sicilian cooking to much the same effect as garum did in Roman cuisine. In Syracuse one of the most popular dishes is spaghetti with anchovy sauce and of course there are many variations across the island.x

Recipe for 2:

1 tbsp of extra vigin olive oil
75 grms of breadcrumbs
2 tablespoons of extra virgin olive oil
2 garlic cloves
2 - 3 tbsp of tomato puree
75ml water
280grms of spaghetti
4 - 5 anchovy fillets in oil
1/2 tbsp of finely chopped parsley.

In a heavy bottom pan add 1 tbsp of extra virgin olive oil and the bread crumbs and toast on a low heat, stirring constantly until they are a rich golden brown in colour and set aside in a bowl.

Put the rest of the olive oil in the pan with the garlic cloves, slightly crushed but still whole. Sauté the garlic until it begins to colour then take them out and throw away.

Add the anchovies and turn down heat if too hot, break them up and let them melt into the oil.

Put slightly salted water on for spaghetti.

Add the tomato puree to the anchovies and stir to release the purees flavour for about 1minuite.

Add the water to the tomato and anchovies and stir, simmer for around 10mins.

Once spaghetti is cooked Add to sauce and gently mix.

***if it looks a bit dry Add some of the cooking water***

Sprinkle over the breadcrumbs and parsley.
