Ragù di manzo, maiale e salsiccia toscana. Otherwise know as Beef, pork and Tuscan sausage ragù. Lots of red wine and cook for 4 hours to develop the flavour. I was given this recipe when working in . Beautiful place with beautiful people ‘e cibo bellissimo’.

Well, there you have it. I lovely Irish Stew (well done Mike) just perfect for this kind of weather. The highlight though was the Colcannon. I love it! Creamy buttery mash with savoy cabbage and spring onion.

hornbeamcookware I waited a long time for this, the no.12 and the saying is really true, good things come to those that wait. Beautiful pan, the crust I got on my steak sear was mad! I’ve done lamb in it, pork chops, mushrooms, various veg. It’s just perfect.

You can’t beat best end lamb rack. In my humble opinion… and it has to be pink, so many times I see it over cooked. The fat has to be rendered down. Served with dauphinois and some asparagus or green beans. Or both of course!!

Biltong. I love it, but it’s expensive and the quality isn’t always great. So, I’m making it myself… been playing around with different meats - this batch is from really good quality rump. Changed the flavouring up, a bit more coriander and some chilli flakes. I’m loving it.
