A simple dauphinoise can make you smile ..it’s so satisfying slicing through & looking at all those layers or is this just a ‘cheffy’ thing 🤔🤔🙄

It’s been quite a while since I last posted; with the idea of gradually retiring.. but I miss creating! We are so lucky to have some of the best ingredients at source in Yorkshire .. so I couldn’t resist these Nidderdale venison cannons.. marinade in juniper & thyme; the cabbage is in the slow cooker .. and I just need a few other ingredients and I’m ready to go! It’s been quite a while since my last post as I am finally retiring from cheffing (well I keep telling myself that)! but I occasionally am tempted to cook for something special and last night was for a very beautiful young lady’s 21st , my neighbours daughter who I’ve had the pleasure of seeing blossom. It was a crazy menu with lots of delicious canapés, confit duck and baked pears as staters, butternut squash risotto and fillet and finally fondants and cheesecakes… a temperamental gas oven and a strange kitchen for ten, the norm for private dining😂😂🥴. It’s taken a solid couple of days to out this together and was worth the effort! Happy cheffing🥳🥳

Hello it is so lovely posting this gorgeous dish of locally sourced mackerel from Cornwall ! Being part of the galley gang on a two week course has been an absolute privilege learning from these international & energetic, highly skilled & super cool yacht chefs & private chefs! I’m looking forward to shortly reopening Fine Dining with Liz🥳
