We have fantastic facilities and industry links, and our further education students go on to work in the very best establishments, such as Buckingham Palace, the British Embassy in Paris and Le Manoir aux Quat Saisons in Oxfordshire. The Hospitality industry offers great career choices and excellent rewards. It is made up of lots of different types of organisations including hotels and restaurants, fast-food outlets, coffee shops and pubs, bars and nightclubs. There are also lots of different roles, from Food-service Management, Front of House to Event Coordination, and other management jobs.

It's community week this week. This morning we had learners from the Beacon school in the kitchen for a session and made mini Simnel cakes. The learners were interested in the history of the cake and the 11 marzipan decorations representing the apostles without Judas the traitor. We also learnt that it could be eaten at Mother's day as well.

Last night we hosted the Rotary club Young chef competition. Here are some photos of the young chefs at work. They had one hour to prepare two plates of main course within a budget of £10. Entrants were from Harvey Grammar and Brockhill school as well as our college students.

A huge thank you to Ian and Cecille Waghorne who came into college today to speak to our learners about life in the industry and in particular fine dining and rosette restaurants. They explained that each restaurant has its own ranks and just because you were in one position in one restaurant, you may have to drop a rank in another depending on the factors. Ian explained that learning in a safe college environment where a business is not at risk is far better than learning on the job where there is very little margin for error. They will be back another time to do a practical demonstration/session.

It has been a busy week in catering with guest speakers coming to share. Ben Cuthbert from L and B restaurants was our first speaker, he spoke about starting businesses up in Folkestone and the kind of attributes that he would be looking for in a work experience learner or an employee. Several learners were interested in working in his various businesses.
Next we had Stefano from Macknades who delighted the learners with a selection of provenance that is sold in his shop. He encouraged the learners to think about local produce and the environment but also the story behind a product. I particularly liked the reference to one of his cheeses "Jane from just outside Canterbury, makes this"
The students were truly enriched this week and a big thank you goes out to all our speakers who care about sewing into the next generation of chefs.
