Hello again face book friends .

As promised , my lemon drizzle cake recipe . Have fun and don't make too much mess .

In to bowl 1 place the following :-

7oz sieved plain white flour
2tsp baking powder
7oz caster sugar

Mix above well

In to bowl 2 place the following :-
4 beaten eggs
5 fl oz soured cream
grated rind of 1 large lemon
4 tsp lemon juice
5 fl oz vegetable oil

Mix contents of bowl 2 together with a whisk or hand mixer

Add contents of bowl 1 to bowl 2 and mix very well until evenly combined .

Pour contents evenly in to 2 x 1lb lined loaf tins and bake for approx. 55 minutes @ 175 0c

Leave to cool in their tins .

For the drizzle I mix 3tsp of lemon juice in a small pot with 5 tbsp icing sugar and reduce slowly on the cooker to a thick syrup .

note :- you are supposed to prick the surface of the cakes when you take them out of the oven and brush with the drizzle . I don't . I heat the drizzle mixture when I need the cakes and brush the cakes as I use them for events . The cakes will keep in a sealed container for 3 / 4 days .

Hello again everyone , as promised . My gingerbread recipe . I got this one years ago from my good friend George Robertson . To me it's the best ever so give it a go .

In to a small pot ( yes pot )
8oz caster sugar
8oz margarine
one tbsp treacle
one tbsp golden syrup

Place pot on cooker and slowly melt together

In a bowl , place :-
8 oz plain white flour
2tsp mixed spice
2tsp ground ginger
1tsp bicarbonate of soda
( mix well )

Add contents of pot to the dry ingredients and mix well

Add two beaten eggs and mix well
Add 200ml of hot water and mix everything very well

Pour in to 2 x 1lb lined loaf tins
Bake at 165 oc for approx. 55 minutes .

Good morning everyone , I hope your all coping with the coronavirus situation well . As you will no doubt have some spare time I thought i'd post three baking recipes for you to try at home . They are exactly as I use for business . Enjoy and if possible please let me know how you get on .

Carrot cake :-
In bowl 1 )
8oz grated carrots
4ov vegetable oil
4oz soft brown sugar ( caster will also be ok )
2tbs honey
1tsp vanilla essence
1tsp cinnamon
1tsp mixed spice

Mix all above together

In bowl 2 )
4oz plain white flour
4oz wholemeal flour
1/4 tsp salt
1tsp bicarbonate of soda

Mix contents of bowl 2 together then add to bowl 1 and mix well.

Add 2 beaten eggs and mix everything well. A handful of raisins or sultanas can be added if you like .( I do )

Pour mixture in to a 2lb lined loaf tin and bake at 175oc for approx. 1hr.

Hi Everyone . Sorry I've not been on facebook for a wee while . Things at club class have been very busy . Spring is in the air and its almost BBQ season. Anyone considering having a BBQ over the spring and summer please get in touch . Lastly , a big thank you to Audi Edinburgh for using us once again to provide the fizz and canapes for their midnight handover on the 28th of February.
