Bank holiday heatwave!
☀️
Summer is officially here… and it’s time for something crisp, refreshing, and perfectly pink in your glass too.
🌸
Absolutely loving this gorgeous Ramón Bilbao Rosé - the 2025 vintage has just arrived from Rioja on Co-op’s shelves.
🍑
Peaches & cream, fresh, delicious and beautifully textured. A rosé made for sunshine, long lunches and warm evenings.

Rosé season has arrived!

Your taste in wine tells a story. And it changes more than you'd expect. 🍷

Nobody sits you down and explains it. It just quietly happens. One day you notice you're reaching for something completely different from what you loved three years ago. Here's how that journey usually unfolds:

🍓 It starts with soft, fruity reds. Approachable, generous, no demands. This is where most of us begin and there's absolutely nothing wrong with it. Comfort is the doorway into curiosity.

🍷 Then structure starts to get interesting. Dry reds, tannins, that sense of *shape* in the glass. You stop just drinking and start actually tasting. Your palate grows a backbone.

🌸 And then, almost without warning, you find yourself ordering rosé. Professionals see it every time. After the weight of reds, your palate wants something fresh but still considered. Rosé delivers exactly that.

🍏 Whites come next, and suddenly they're anything but simple. Acidity, texture, that quiet mineral thread running underneath. You realise attention changes everything about what you taste.

✨ Then sparkling. Not just for toasts anymore. Bubbles carry flavour with a kind of precision that feels effortless. This is where complexity stops being something you chase and starts being something you simply enjoy.

Sound like a journey worth exploring in person? 🥂

The most common reason wine disappoints you has nothing to do with the wine. 🍷

It's temperature. And almost everyone gets it wrong in both directions.

Here's what's actually happening in your glass:

🌡️ Your red is probably too warm
"Room temperature" in most homes is warmer than red wine wants to be. Heat pushes the alcohol forward, dulls the fruit and makes every sip feel heavier than it should. A few minutes in the fridge before you pour makes a remarkable difference.

🧊 **Your white is probably too cold**
Straight from the fridge, white wine is essentially closed. The aroma disappears, the acidity feels sharp and the whole thing tastes flat. Let it sit for ten minutes and watch it come alive. Same bottle. Completely different experience.

The quickest fix you'll ever learn:
Cup the bowl of the glass in your hand. Too cold against your palm? Give it a moment. Too warm? Three minutes in the fridge. That's genuinely all it takes.

Temperature shapes everything: the brightness of the acidity, the smoothness of the tannins, how open the aromas are. Most disappointing wine moments are actually just temperature moments.

This is exactly the kind of thing that clicks when you taste side by side with people who know wine well 🌷

Which is why Edinburgh Uncorked on 9th May is worth your Saturday afternoon.

Tasting wine with confidence is a skill and it starts with knowing what to actually look for 🍷

Most people sip and either love it or don't, but there's a whole conversation happening in the glass before it even reaches your lips.

Look. Smell. Taste. In that order. Every time.

Once you know what to pay attention to, wine stops being guesswork and starts being genuinely fascinating. Save this one for later and come back to it next time you open a bottle 📌

And if you want to put it into practice in person? Edinburgh Uncorked on 9th May is the perfect place to try 🌷

Over 100 wines, brilliant experts and an atmosphere where asking questions is absolutely encouraged.

’ve probably seen it… that elegant swirl from bottle to decanter. But is it just for show? Absolutely not.

Decanting transforms your wine.

✨ It softens – especially younger reds where tannins can feel a bit grippy or harsh. A little air smooths everything out.
✨ It unlocks aromas – suddenly those hidden layers of dark fruit, spice, and florals come alive.
✨ It separates sediment – particularly important for older wines, giving you a clearer, cleaner glass.

Think of it as letting your wine wake up.

Some wines need just 20–30 minutes… others can handle a couple of hours. And yes—some delicate older wines prefer a gentle pour and not much air at all.

The magic?
A wine that felt closed or tight can become expressive, generous, and completely irresistible.

So next time your red feels a little shy…
give it some air and watch it shine.
