On Sunday 19th October I cooked for a friendly informal group of old friends, celebrating their hosts 50th Wedding Anniversary, opting for a relaxing catered Sunday lunch at their home.

Seafood Canapés were top of the bill, served with a champagne apéritif, followed by:-

Venison Daube, Buttered Kale, Roasted Root Vegetables, Rowan Jelly
and to finish..
Poached Pears, Crème Catalan Ice-Cream, Chocolate Crémeux, Orange Tuiles.

Canapés:-
Hot Crab bon bons w/ beetroot purée.
Choux buns w/ crevette mousse, smoked paprika.
Sizzled Prosciutto Scallops w/ lime maple glaze.

My holiday is coming to an end, I'll soon be back in the kitchen getting creative!

In the meantime a very quick snippet of my hiking holiday with hubby where we hiked for 9 days / 115 miles / 185 Kms in the stunning Carpathian Mountains, Transilvania Romania.

Beautiful scenery, eerie forests, 'wildlife', welcoming folk, hearty food, rain, snow, an amazing adventure!

It's been a great year (so far) !

Now it's holiday time ....relaxation (ha ha!) of hiking 200km over 9 days in the stunning Carpathian Mountains - Transylvania, then a few days poking around Vlad the Impaylers' stunning gothic home town of Sighisoara.

THANK YOU to all of my customers, whether I've created a beautiful cake for you or you've hired me as a chef to plan and cater for you, it's been a fulfilling year to date.

More to come through the final months of this year, but in the meantime ....let's get going!

A BIG congratulations to Louisa & Albert who got married on Saturday 13th September 2025 at the 'Edinburgh Grand - St Andrews Square, Edinburgh.

Earlier this year, Louisa and her mum Paula arranged a consultation with me, here in the Scottish Borders, to plan and discuss her bespoke cake design.

Sustainability and the fact that I use A LOT of organic ingredients / flavours / natural colouring were a few of the reasons that drew them to me. Followed by design features of my work, flexibility and guidance towards the creation of their bespoke cake. We had a relaxed chit chat, finishing the afternoon with a few ideas confirmed.

A two tiered cake was born ..... Finished with a water colour 'white wash', loose palette knife flowers, a touch of gold leaf to highlight the palette knife petal edges. Finally a snug posie of handcrafted wafer paper flowers to compliment the seasonally led floral displays by Marion

Cake flavours were as follows.... top tier of rich chocolate fudge filled with chocolate crémeux, vanilla Swiss meringue buttercream. The bottom tier of summery zingy elderflower and lemon, lemon curd, vanilla smbc.

Congratulations and lots of happiness to Keely and Jordan who celebrated their wedding here in the Scottish Borders at Wedderlie House, Wednesday 3rd September 2025.

It's been a year since noting their date in my diary with lots of discussion on cake / size / style...

Why?

Well, a small cake was required to join the dessert table which was to be supplied by their caterers. But a cake is ABSOLUTELY necessary as part of a wedding ceremony...

Sleek, pretty, complimentary and in theme, their bespoke cake design was born.

6 sponges of lavender, earl grey and red berries, filled with homemade berry compote, made from organic juicy redcurrants, blackcurrants, raspberries from our garden and a second filling of silky vanilla bean Swiss meringue buttercream.

Dark and white chocolate ganache complete the flavours / cake structure, and it's ready for painting.

Natural pigments of purple and green were painted as soft underlying watercolour on the lower part of the cake, then the colours were painted on, focusing on soft pink purple, darker purple and intermittent green...et voila.

Tiny vegan white pin head pearls complete the soft design.

Even a cupcake from me will have that attentive touch to make it a special and enjoyable offering...Keeping in tune with organic, all edible, food safe and handcrafted components.

Cupcakes in the colour theme of Purple and Gold (as that's the colour of the recipients uniforms), were ordered by my client as a 'Thank You' to the staff at Earlston Nursery for their work, caring for toddlers and being a reliable collective group of stars 🌟!

Vanilla bean flavoured sponge, garnished with pressed violas and pop of joyful colour with fresh white and cerise dahlia petals, mini meringues dusted with beetroot powder.

I just thought I'd share a mix up of last night's platters, served to a wine tasting group in Northumberland.

It's such a wonderful splash of colour for a summer's feasting buffet...fresh, fruity, crisp and oooh so tasty.

Happy Birthday to Mei-Lian and thank you to Angus for ordering a surprise cake.

Angus has named it a 'Klimt Cake', taking inspiration from Gustav Klimt's use of gold leaf (I've painted a base layer of gold paint) and intricate and abstract designs (of which I've applied the pointillism technique, edible dried pansies, wafer paper designs with dried violas).

A delicious cake maded from a black sesame tahini sponge, filled with a vanilla bean and orange zest Swiss meringue buttercream. Crumb coated, dark chocolate ganache, finally a white chocolate ganache and then I'm ready to paint....

The colours are natural pigments from in which I've painted 'point by point' onto the cake until they blend as the final design.

Topped with a 'Klimt headdress' of intricate floral wafer paper designs, moulded together as ribbons to adorn the cake....et voila.

I was cooking dinner for clients last night, who are staying in the Scottish Borders for a fishing weekend on the River Tweed at Drybrugh Steadings.

Eyemouth shellfish, Scottish lamb, homemade ice-cream and Errington farm cheese were all on the menu.

It was a cosy and cheerful evening. Thank you.

DOH!

It's still picnic weather...so why not 'fill your baps', 'pack your buns' and off you go!

I'm talking about Brioche, Turkish pides, Focaccia and of course for my regular Friday 'Dough!' group organic seeded wholemeal loaves 500g / 1kg.

We love a brioche bun at home with home made beef burgers, or as pictured with a panko crumbed fish cake, pickled red onion, tartare sauce.

Fluffy Turkish pides make a great alternative to a dry pitta bread, and a Focaccia with rosemary, grapes, blackberries make a great rip and share to mop up those BBQ juices (or when the weather changes let's not rule out soup dunking).
