- The Taste of Scottish Summer Wedding Cakes -
There’s something very grounding about working with seasonal fruit. The ritual of hulling, stirring, and tasting. Preserves made by hand, from scratch, in my own kitchen. No shortcuts, just simple ingredients and time. And when it’s layered inside a wedding cake, it becomes part of something even more meaningful.

1️⃣ The Beginning: Early summer strawberries, plump and full of promise. Picked for flavour, not shelf life.
2️⃣ The Making: Simmered gently in small batches, without additives, synthetic ingredients or shortcuts. Just fruit, sugar, and care, delicately layered into cakes ,the same way I approach everything I make.
3️⃣ The Finish: A little spoonful of summer. Sometimes hidden between layers of vanilla bean sponge, sometimes served with yoghurt for breakfast! Always simple. Always intentional.
