This wedding season has taken me all over Scotland, discovering many incredible venues for the first time, including this gem right here on my doorstep in Highland Perthshire - the Old Manse of Blair.

A 5-star boutique hotel and Michelin-recommended fine dining restaurant, it's the perfect backdrop for a very special, intimate wedding weekend.

Sandy and Ian travelled all the way from Texas with their closest friends and family for their Scottish destination wedding, beautifully planned with the help of the lovely Lindsay from Wide Sky Weddings.

Their beautiful cake was set in the centre of the Orangery, growing from a stunning meadow of fresh flowers, beneath a suspended antler chandelier delicately decorated with asparagus ferns. The setting was brought to life by the incredibly talented Emma and Karen of Coach House Flowers.

Later, a horseshoe dining arrangement was created around the Orangery, with the floral cake display at its centre, making the cake a real focal point of the evening.

A truly beautiful setting for a very special celebration. 🤍

A recent wedding cake, designed for Emma and Andrew who were married at Rossie on the Earn, here in Perthshire.

The couple were drawn to the hand-torn, organic textures of one of my previous archive cake designs, but we wanted to evolve that visual DNA to match the sheer scale of a tall, contemporary four-tier silhouette. Knowing the cake would sit against the venue's stone walls, I scaled the texture up and moved away from smaller fine ruffles in favour of larger, sweeping fondant folds that could comfortably hold their own against the heavy, rugged masonry backdrop.

Pulling inspiration from their stylist's mood board, I brought in sugar sea holly thistles. Their sharp, spiky geometry perfectly matched the hand-torn lines of the cake, adding a beautifully raw, architectural edge to the final design.

A little look at a recent favourite, designed for Wendi and Karl's wedding at Ballintaggart Farm earlier this year.

Wendi was drawn to the organic textures of some of my previous work, and loved the idea of an unstructured, informal silhouette. The soft green tones and natural movement were subtly inspired by the couple's beautiful wedding invitations, layering these shifting pale sage gradients and hand-torn fondant ruffles to mirror that vision.

Olivia and Marco’s wedding cake last spring at Gosford House.

It was my first time delivering here, and it's hard to put into words, but the marble hall just has a distinct feeling about it. Even with all the grandeur, there is a real calming stillness about the place.

I was there for quite a while setting up, working on the balcony above the hall in the quiet before the guests filled the room, with just the florists around.

To balance the scale of the architecture, we designed a five-tier silhouette with classic piping details. A lush green bed of fresh moss at the base grounded the design perfectly against the marble backdrop, and connected beautifully with the incredible floral installation running right along the balustrade.

For Olivia and David's wedding cake at Ballintaggart Farm earlier this year, the brief was simple yet striking: minimalist structure, a sculptural feel, and a delicate pop of spring colour.

Leaving plenty of negative space on the minimalist tiers, the floating installation of watercolour wafer paper petals had room to flutter.

The cake was alive with movement, feeling weightless, windswept and uniquely contemporary.

~ Embracing the Long Cake Trend ~

Bypassing traditional stacked tiers for Alyssa and Stewart's recent marquee estate wedding in the beautiful Glen Prosen.

Alyssa reached out to me with two main requests: a love of the horizontal table runner cake, and a love of fresh flowers. The real inspiration for the structure came when she shared styling vision of informal layering, dramatic church drapery, and abundant wild and whimsical florals.

Wanting the cake to feel like an organic extension of that atmosphere, it had loose fondant folds to mimic the idea of soft, elegant movement of layered textiles cascading along the table.

From a bed of frothy, translucent wafer paper ruffles a vibrant, meadow garden bloomed to celebrate Alyssa's love for flowers.

A contemporary tablescape cake designed to complement a beautifully curated Scottish celebration, executed alongside an incredible wedding supplier team ✨🤍

Earlier this month, this sculptural cake design made its way to the spectacular, coastal setting of Barnbougle Castle on for a lovely couple traveling all the way from the US for their Scottish wedding celebrations.

When Nicole initially reached out, she was drawn to some of my previous work and specifically mentioned her love for "architectural" cake styles. Leaning into that direction, I took loose inspiration from the lines of her wedding gown and the dramatic, airy and windswept seaside elements of the venue backdrop.

The fluid fabric-like fondant folds sit in contrast with the light, organic texture of the veined rice paper sails. The result is an entirely monochromatic design, embracing flowing asymmetry, that relies purely on movement, shadow, and tactile depth.

Hand-crafting the details that define the modern fine art wedding cake.

A little look at how I create these miniature torn-edge sugar roses, layering them up petal by petal.

By skipping mass produced elements and props, and focusing entirely on raw, sculptural textures, the final design is always entirely unique, and full of unexpected details that invite a closer look, even in the grandest of venues.

I love the feel of an intimate wedding.

Avery and Jack travelled from the US for their day at Gleneagles Hotel, keeping things small and personal with just 20 guests.

It was a pleasure to design this sculptural cake for them - something that felt right at home in the warm, glowy atmosphere of the room while they sat down for dinner.
