Can’t believe we’re just over a week away to Christmas!!

Just an update to say I’m no longer taking new orders and will be off on maternity from the 22nd Dec.
I’m unsure what date I’ll be able to return to work just yet, but I’ll still use the page for recipes etc to keep me occupied 😅

Tiramisu Pots

These went down a treat yesterday for Easter dinner 😍
The easiest dessert for anyone who’s afraid of baking!

Ingredients:
500g Mascarpone
140g Caster Sugar
4 Egg Yolks
250ml Double Cream - Whipped
Pack of Lady Fingers or Madelines (I used Madelines)
2 Tbsp of Good Quality Ground Coffee
2 Tbsp of Dark Rum (could also brandy/amaretto)
Approx 200ml Boiling Water
Dark & White Chocolate Bars - for grating

Method:
1. Using a whisk (hand or electric) whisk together the sugar and egg yolks until you get a soft/fluffy texture.
2. Spoon in the mascarpone and whisk together until you get a smooth and thickened consistency (soft peaks)
3. In a seperate bowl, whisk together the double cream to make it whipped/thick. Spoon the cream into the mascarpone mix and fold together.
4. Boil the kettle, and pour the coffee & liqueur into a bowl. Mix in the water and stir.
5. Get your glasses/jars/dessert pots ready. Start by dipping the sponge fingers into the coffee mix (quickly) and place 2-3 fingers in the base of your pot.
6. Spoon in 1-2 Tbsp of the mascarpone mix, and layer again with the sponge fingers. Repeat until you’ve filled the pot.
7. Grate the dark and white chocolate on top of desserts. Then cover with film and place in the fridge for approx 3-4 hours to set.

Homemade Slaws

So, you all went mad today for the halloumi flatbreads we made in our community class this morning!

These are the slaws I would usually make to have as sandwich fillers, or with a salad. I always think once you make your own slaw at home, you’ll never buy store bought again!

Here’s the recipes to the slaws:

Red Cabbage Slaw:
1/4 - 1/2 red cabbage (depending on size of the cabbage) - slice finely or grate
1 carrot - grated
1 onion - sliced finely
1/2 lime - for juice
1 Tbsp Mayo - use more if you like
Handful of chopped fresh coriander

White Cabbage Slaw:
1/4 - 1/2 white cabbage - depending on size and finely sliced or grated
1 carrot - grated
1 onion - finely sliced
1/2 lemon - juicing
1 Tbsp of Mayo - add more if you like
Handful of chopped fresh parsley
Black pepper to season

Method:
Combine all ingredients of choice of slaw from above.
Store in the fridge for up to 3 days, sealed.

Sandwich Inspo:
Fry/grill some halloumi. Heat a flatbread, then add the red cabbage slaw, halloumi and rocket leaves. So good 😍

Red Lentil Dahl

A good one for making in bulk and keeping leftovers in the freezer.
I find this dish a bit filling, so you don’t need to serve big portions! It’s also nice with just the naan bread alone.. but you can add rice if you want to.

Serves 4-6 (depending on portion size)
Ingredients:
1 onion - diced
2 garlic cloves - minced
1cm fresh ginger - grated
1 tsp each of garam masala/paprika/cumin
1/2 tsp each of coriander/turmeric
120g red lentils
400ml veg stock
400ml chopped tomatoes
200ml coconut milk
Season with fresh coriander

Method:
1. Heat a pan with olive oil and add the onions, garlic and ginger. Cook for 2-3 mins.
2. Add in all the spices along with a splash of water to form a paste. Let the spices cook for a couple of seconds.
3. Add the lentils and stir to combine with the spices.
4. Pour in the stock and chopped tomatoes. Have your pan on a med/low heat and leave to simmer for 12-15 mins. Stir occasionally to avoid lentils sticking to the pan. You can also add more water if you think it’s becoming too thick.
5. Pour in the coconut milk and leave to simmer again for 12-15mins.
6. Season with a handful of fresh chopped coriander, and salt & pepper if want.

Best served with naan bread!

This is a great dish for cutting out meat in the week, or cooking on a budget! So healthy too 🙌😍

Chicken & Chorizo Casserole

Another one pot dinner, that can feed the whole family 🙌

For this I used:

4-6 Chicken thighs (i know I’ve used fillets in this picture, but the thighs cook better in the casserole)
1 onion
2 cloves of garlic
50g chorizo
1 tsp Ndjua (optional)
Dash of balsamic vinegar
1/2 tsp paprika
1 bay leaf
1 tsp tomato purée
300ml chicken stock
400ml chopped tomatoes
Fresh chopped parsley
400-500g New potatoes halved (cooked separately)

Method:
1. Heat the oil in a casserole pot, and cook the chicken on each side until it has just browned. Remove to a separate plate.
2. Add the onions, garlic, chorizo & Ndjua to the pot and cook for 4-5 mins.
3. Add in the balsamic vinegar and tomato purée, stir and cook for another 2 mins.
4. Add in the bay leaf. Then pour in the stock and chopped tomatoes. Bring to the boil, then reduce the heat to let it simmer.
5. Add the chicken back into the pot and leave to simmer for approx 20-25mins.
6. Whilst the casserole is simmering, cook your potatoes in a separate pot. You can add these in together with the casserole once everything is cooked.
7. Season the casserole with fresh copped parsley. Salt & pepper if needed.

Cheesy Broccoli Bites

Change up your lunches, and try these cheesy broccoli bites with dip. Perfect for lunch boxes, or just as a snack!

They are SO good, I wish I had’ve made more!

To make 6 (or7) balls you will need:

1 head broccoli- chopped/grated into very fine pieces
1/2 onion - very finely chopped
1 garlic - minced
Handful chopped parsley
30g breadcrumbs - with paprika & black pepper mixed in
20g cheddar cheese - grated
1 Tbsp flour
1 egg

Method:
1. In a mixing bowl combine the broccoli, onions, garlic & parsley
2. Add in the seasoned breadcrumbs & cheese. Then coat with the flour, stirring to combine.
3. Add in the egg and stir to form a sticky texture.
4. Press and roll the mixture into balls.
5. Heat a good serving of oil in a frying pan, on high heat. Cook the balls for approx 4-5 mins, making sure to turn and brown all the sides.
6. In a preheated oven, bake the balls for 8 mins at 200C.

For the dip:
Add 3 Tbsp Mayo, 1/2 juice of lemon, 1/2 tsp paprika and chopped parsley to a dipping bowl. Stir to combine.

These can also be stored in the fridge for up to two days!
