🍑✨ Peach & Chocolate Ricotta Cake ✨🍫
A soft, fragrant summer cake that melts in your mouth — perfect for breakfast, brunch an afternoon treat or a special day like my son birthday celebration! Simple ingredients, irresistible flavor! 🍰☕️ and so soft, moist, and full of flavor — a new family favorite! 💛
INGREDIENTS:
• 120 g fine brown sugar
• 2 large eggs + 1 yolk
• 140 g ricotta
• 75 g melted butter
• 180 g all-purpose flour (type 00)
• 45 g cornstarch
• 12 g baking powder
• A pinch of salt
• 100 g chocolate (chopped)
• 1 peach, diced
FOR THE TOP:
• 2 peaches (thinly sliced)
• 2 tbsp peach jam
• 1 tbsp water
• Powdered sugar (optional)
• Crumbled amaretti cookies
INSTRUCTIONS:
1. Beat eggs and sugar for 5 minutes until light and fluffy.
2. Slowly add melted butter and ricotta, mixing well.
3. Sift in flour, cornstarch, baking powder, and salt. Fold gently.
4. Add diced chocolate and peach, mix with a spatula.
5. Pour into a cake tin, decorate with peach slices.
6. Bake at 180°C (350°F), fan mode, for about 35 minutes.
7. While still warm, brush the top with diluted peach jam and sprinkle with crushed amaretti.
