🍑✨ Peach & Chocolate Ricotta Cake ✨🍫
A soft, fragrant summer cake that melts in your mouth — perfect for breakfast, brunch an afternoon treat or a special day like my son birthday celebration! Simple ingredients, irresistible flavor! 🍰☕️ and so soft, moist, and full of flavor — a new family favorite! 💛

INGREDIENTS:
• 120 g fine brown sugar
• 2 large eggs + 1 yolk
• 140 g ricotta
• 75 g melted butter
• 180 g all-purpose flour (type 00)
• 45 g cornstarch
• 12 g baking powder
• A pinch of salt
• 100 g chocolate (chopped)
• 1 peach, diced

FOR THE TOP:
• 2 peaches (thinly sliced)
• 2 tbsp peach jam
• 1 tbsp water
• Powdered sugar (optional)
• Crumbled amaretti cookies

INSTRUCTIONS:
1. Beat eggs and sugar for 5 minutes until light and fluffy.
2. Slowly add melted butter and ricotta, mixing well.
3. Sift in flour, cornstarch, baking powder, and salt. Fold gently.
4. Add diced chocolate and peach, mix with a spatula.
5. Pour into a cake tin, decorate with peach slices.
6. Bake at 180°C (350°F), fan mode, for about 35 minutes.
7. While still warm, brush the top with diluted peach jam and sprinkle with crushed amaretti.

I don’t know about you but I’ve always found January to be a difficult month! I’m always sleepy, hungry and cold!! Luckily I don’t lack the desire to cook! Breakfast is my favorite meal, and I like it to be different every day! Like many of you, after the holidays, my goal is to lose weight! 🤣 So... Mini chocolate pancakes, ricotta, homemade granola and strawberries.

Back home after a long Italian holiday full of deliciousness and carbs!
I think I ate my body weight in agnolotti and little patisserie. Just to say, this morning I was not brave enough to check my weight!!!
For lunch today a salmon poke bowls that was a powerhouse of nutrients! Packed with Omega-3 fatty acids for heart health, protein for muscle repair, and a rainbow of veggies for vitamins and minerals.
Thanks to for the inspiration and look forward to see you in your new restaurant in Tunbridge Wells.
