This week I made a special cupcake delivery to a new dad's workplace, to share a bit of joy with his colleagues after the safe arrival of his daughter.
What a lovely reason to eat cake!

Three salads and a smoked salmon platter to accompany a barbecue 😋🍔🌞
There must have been thousands of barbecue's last week, with a heatwave in the school holidays...and some delicious fresh salads take a barbecue to the next level!
These salads travelled in eco friendly palm leaf bowls and platters, along with the purple velvet cake, to a 40th birthday celebration barbecue. 💜

Salads:

-Classic potato salad with boiled eggs and chives
-Brocolli, apple and cashew salad
-Thai style curried peanut and vegetable noodle salad

The salmon platter included cherry tomatoes on the vine, cucumber, radish, avocado, pickled red onion and a lemon and black pepper cream cheese dip.

I do LOVE a bit of colour, but I usually make quite neutral cakes - so this was a super fun change!
Red velvet cake filled with purple cream cheese icing, blueberry conserve and fresh blueberries and blackberries.

I've had a lovely time this week cooking for a school residential at Bassenfell Manor. Lovely kids, well-equipped kitchen and a beautiful drive every day 😍 I didnt get around to taking many photos so here is a random selection including my personal favourite: leftover Yorkshire pudding filled with ice cream. A Grazing Lunch 😙👌
..a selection of tasty nibbles for working lunch on a glorious day in Keswick!
This spread started life down in the Pencil Factory kitchen, and was reassembled as an edible puzzle two floors up in a meeting room with a lovely view across the fells.
I then went off to my next cooking engagement but even though I spent the whole of this beautiful day in various kitchens, I spent a minute taking in the view ❤️

✨️A Celebration Feast ✨️

The main buffet for the Cumbria Health 30th Anniversary Ball featured a selection of hot and cold dishes, charcuterie, cheese and sweet treats.
It was such an honour to be part of this event celebrating health professionals and three decades of community care. It was a lovely evening of sparkly outfits, live music, laughter and....plenty of food!

A very big thank you to my fantastic team as always for their hard work and support 👩‍🍳

On the menu:

-Spinach and ricotta cannelloni
-Chicken skewers with a spiced apricot glaze
-Mini steak pies
-Harissa roasted veg
-Roast baby potatoes

-Honey mustard baked salmon
-Charcuterie selection
-Cumbrian cheeseboard

-Brocolli, apple and cashew salad
-Yellow rice salad with dried fruit
-Moroccan carrot and lentil salad
-Greek salad

-Fresh fruit platters
-Lemon Posset
-Raspberry shortbread bites
-Dark chocolate truffles

I have far too many photos to share from last night's food at the Cumbria Health 30th Anniversary Ball at the Pencil Factory - so I will begin with canapés - as did the guests!
14 plates of freshly made and lovingy assembled assorted canapés were brought out to our beautifully attired guests as they listened to live music and enjoyed welcoming speeches.

On the menu:

-Mixed marinated olives
-Melon, prosciutto, basil and mozzarella skewers
-Minted pea pesto and parmesan crostini
-Goat's cheese and fig jam crostini
-Salmon mousse on cucumber
-Sticky honey sesame soy sausages

Lunch today at the Pencil Factory ✨️
A scrumptious buffet spread for 80 including:

-Baguettes with the usual favourite fillings and some new additions to the menu: meatballs in tasty marinara sauce, and roast sweet potato and avocado in a green goddess herb dressing.
-Freshly baked Cumberland sausage rolls
-Cheese and bacon/ spinach and feta frittata
-Fresh fruit platters
-Chocolate brownies
-Carrot cake
-Shortbread

What I got up to this week...🧁🥪

A few dozen gluten free & dairy free cupcakes for a 90th birthday, and a selection of sandwiches for a National Trust staff social at the Pencil Factory....as well as a few hours of prep for events coming up. The month of May is going to be a busy one!
